Not too long ago, I used to frequent a bar where there were three stouts on offer. It really had to be a Cork bar. And it was. The good old boys, and some not so old, had a certain skill. 


The barman was always ahead of the thirsty posse, filling pints and lining them up. Which was the Guinness? Murphy’s? Beamish? Some fellows could tell by the colour. Others by tapping the full pint with a fingernail. I was always impressed. But I think those good old boys would be lost today with the variety of the black stuff, both stout and porter, available, thanks to the rise of craft beer producers.


Just got one of the most recent in my hands, the Black Road Campfire Porter by Mitchelstown’s Eight Degrees. It, along with Fort of the Fianna Belgian IPA, both form part of the Mitchelstown’s brewery’s Irish Munro series and each features in their widely available Christmas special, the pack completed by a bag of superb coffee from Badger & Dodo, the local roaster.


Initial signs from the porter are good, the classic mahogany/black with a coffee coloured head. Aromas are smoky, coffee. The palate is smooth, complex, caramel and that smoke trace again; chocolate and coffee and sweet caramel take me home.


The Eight Degree folks are naturally adventurous. Who wouldn’t be if you live in the vicinity of their beloved Galtymore. Irish Munros are peaks over 3,000 ft. Many of these peaks belong to the MacGillycuddy Reeks in Kerry, one is in Wicklow, and then, towering over the Mitchelstown brewery, is Galtymore. 


The Galtees are not just decorative. “These mountains are also key to us producing world class beers, producing wonderfully soft water via its red sandstone ridges. The Black Road is the hillwalker route up Galtybeg and onto the higher Galtymore for magical views across the countryside. Inspired by the mountains, we’ve brewed a porter using Belgian and German malts that impart beech- and oak-smoked flavours along with coffee notes.”


Details:

Malt: Irish pale ale malt, beech smoked malt, oak smoked wheat, café malt, CaraAroma, chocolate malt.
Hops: A light bittering of Nugget.
ABV: 6.5%
IBUs: 12


I just love Eight Degrees. They tell good yarns, make great beers and are always game for a laugh. And always come up with Food Pairings. In this case: This smooth sipper is eminently suited to campfire foods: bonfire bangers, or sausages, cooked on sticks over a woodfire, potatoes slow roasted in the embers and bubbling pots of homemade baked beans with lots of smoked paprika.

Eight Degrees “Fort of the Fianna” Belgian IPA 5.4%



Clear and gold in the glass, this September issue in the Eight Degrees Irish Munro series takes you to the summit. Whether mountain high or just atop a bar stool, this Belgian IPA is one to enjoy.


The short-lived head doesn't last as a long as a foggy cap on the head of Kerry’s Caher, which just about qualifies as an Irish Munro. The flavour though, strong and hoppy, is long-lived, a bit like the legendary Fianna who, with leader Fionn MacCumhaill, enjoyed their adventures across the Irish mountains long before the invention of those para-glider things. Sorry, Mr Kiwi!


But big congrats to all at Eight Degrees for yet another superb beer in this series. Excellent citrus and floral notes here, smooth and soft and a dry and bitter finish. A very satisfying taste adventure whether mountain high or just atop a bar stool.


They say: We added our current favourite hop Loral into the whirlpool for this Belgian IPA, followed by dry hopping with the elite new experimental HBC 522, which has strong citrus and floral notes. Singing above all this is our Belgian yeast strain of choice: BE256 is a quick attenuator producing a clean beer with hints of spice, clove and banana. Raise a glass to the Fianna.

Food advice: The delicious bitter flavour of this beer will play happily with a big serving of the best Belgian-style frites and mayo. Add a side of Glenbeigh moules for extra glory, but hold the lemon. You’ve all the bitterness you need in the glass. Try with a Moroccan butternut squash casserole to cut through the sweet veg and play happily with those spices. For the ultimate pairing, get a slice of pumpkin pie; the fruit and floral flavours of the beer will enhance the savoury-sweetness of this quintessential autumn desert.

And more news from Eight Degrees: We've also released the final beer in our IRISH MUNRO Series; Devil's Ladder Belgian Tripel aged in sherry casks. This is the pinnacle of our 2020 series, a beautiful beast of a beer which can straddle both sides of the Christmas meal. Chill and serve in small sherry glasses to start, with a selection of tapas-style nibbles: good olives, smoky roasted almonds, salty anchovies. For a sweet ending, serve it at room temperature in a brandy snifter to offer a delicious counterpoint to Christmas pudding, chocolate Bûche de Noël, or even a creamy stilton.  

Think I'll keep that one until the big day itself!

Red Ale (Part 2)


Is Red Ale an Irish style? In the 1970s, beer writer Michael Jackson is credited with giving the tag to Smithwicks. According to World Atlas of Beer, American beer competitions started awarding prizes for the category and smaller Irish breweries started to “launch highly-hopped higher strength or even barrel aged versions”. As you can see below, Eight Degrees gave as good as they got in recent competition with their dry Sunburnt. Indeed, the four below are each very enjoyable.


The recent Brew Dog books mention only the American Red, in fact they barely mention the Irish scene at all. Sláinte (2014) acknowledges that there is some “dissent” about Red being an Irish style but say some local breweries have “evolved the style”. More recent examples include Porterhouse who have “banished the sweet”.

Eight Degrees “Sunburnt” Irish Red Ale 5.0%, 440ml can via No 21 Cork



In September 2020, Brewing's Sunburnt Irish Red was named World's Best Pale Amber at this year’s World Beer Awards. The verdict on the beer from a panel of international respected judges was: "Dry, a distinctly deep coppery red in colour, and full-bodied with a good head. There are some bitter, burnt raisin aromas, and it’s distinctly hoppy but with malts still present. Very assertive on the palate, with light carbonation and multi-layered flavours”.



Eight Degrees founders Cam Wallace and Scott Baigent were delighted. “Sunburnt Irish Red is the second beer that we ever brewed - back in 2011 - and it’s been a core part of our range ever since.”  


Coppery red for sure but that head vanished quickly. That palate though is something else with its edgy melange of hop and malt, bitter and toasted, making it both assertive (as they say) and distinctive. A new kind of Irish red perhaps! The winning kind, I surmise, as the gently bitter finish fades away.


They say: Like an Irishman on holidays in the Canaries, this beer has a red glow with a chilled out mellow feel. A traditional Irish style with a twist,  – orange marmalade on toast – with a gentle bitterness, 

the distinctive caramel notes balanced with a bitter orange hoppy aroma. 


It wouldn’t be Eight Degrees without a food tip: Goes really well with roast pork, lamb burgers or a venison stew and don’t miss a chance to try it with an Irish washed-rind cheese. But beware: keep out of direct sunlight.

Tasting notes
Colour/appearance: pours a rich red colour with a light tan head.
Aroma: burnt caramel notes and a hint of hoppy citrus.
Flavour: toasty caramel flavours are balanced with a soft hop bitterness. Think orange marmalade on toast.
Aftertaste: gentle bitter finish.


Cotton Ball Velvet Red Ale, 5%, 500ml bottle via Cotton Ball off licence




A very dark red indeed with a coffee coloured head (which departs pretty quickly leaving just a lacy hint or two remaining on the top). Aromas are moderately intense, floral and fruity (citrus). No shortage of character even if pretty much in the classic mode (though it is gluten free) but there’s a refreshing tangy, even exotic, fruitiness and a touch of clean pine in there as well. 


A well-made beer, nicely balanced between the various hops, the bitter and flavour, nothing extreme and the malt sweetness. With its caramel and toffee notes, it makes a pleasant smooth drink on its own and I expect it makes a good companion at the table. Might go down well with one of those tasty Wild Boar burgers from Ballinwillin Farm or perhaps a pizza in the Cotton Ball when it reopens.


Hops used are Herkules and First Gold with a dry hopping of the versatile Mosaic. They have (or at least did have) a nitro draught version in the bar. They brew quite a range of beers and the core ones are all on draught in the bar and indeed in lots of other bars. And there’s a handy growler service as well.


They say: “We are brewing our beers in the true spirit of our Great Grandfather Humphrey J Lynch, an American civil war veteran and cotton mill foreman. Three wives later, Humphrey returned to his native Cork in 1874, to set up his very own public called the Cotton Ball. The pub and the family are still here today and three generations later we are finally brewing our very own selection of craft beers in his honour.”  The brewery was founded in 2013.


The White Hag “The Fleadh” 6.8%, 330ml can via Bradley’s of Cork



Some years ago, I was in a brewery. Well, I’m in at least one brewery every year! But this was different, a big sporting occasion in The Kiln at Murphy’s Brewery in Cork. Lots of gossip going on, lots of beer being poured. The guest of honour came in and you knew it, the minute he walked in the room, even if you had never heard of Charlie Hurley, the Cork born Irish international who has had a stand named after him in Sunderland. He just had this presence and the room unanimously acknowledged it.


It’s a bit like this with The Fleadh. You go through the preliminaries. The deep dark red colour, the last stop before black. The aromas. And then comes the big intro. On the palate. The hubbub stops, tastes buds turn and you concentrate as the personality of this strong beer takes over. Not in an overbearing way, mind you.  But there’s a firm handshake from the earthy malts and the fresh hops, caramel and fruit and a youthful freshness. A superb red ale. One you cannot ignore. Quite possibly your beer of the year.


They say about An Fleadh: A celebration of legendary festivals in Irish Mythological society, an ancient cultural event of music, dance, story and song. Our Red IPA is a symphony of complex earthy malts and fresh forward hops that play the lead in this ensemble. The resulting performance is a seamless combination of fruits and caramel, complimented by the distinctly fresh pine tones.


Just like the legendary Charlie Hurley, this is a strong one at 6.8% ABV and the IBU is 55. The minute he walked in the room…. into that same room, just like Noel Cantwell and Frank O’Farrell.

It's just been announced that Eight Degrees Brewing's Sunburnt Irish Red has been named World's Best Pale Amber at this year’s World Beer Awards. 


“We’re delighted with the news,” said Eight Degrees founders Cam Wallace and Scott Baigent. “Sunburnt Irish Red is the second beer that we ever brewed - back in 2011 - and it’s been a core part of our range ever since.”  


The verdict on the beer from a panel of international respected judges was: "Dry, a distinctly deep coppery red in colour, and full-bodied with a good head. There are some bitter, burnt raisin aromas, and it’s distinctly hoppy but with malts still present. Very assertive on the palate, with light carbonation and multi-layered flavours." 


Citra Single Hop IPA was chosen as a Gold Medalist in the highly competitive IPA category.


Eight Degrees also took Bronze for Full Irish Single Malt IPA and Black Ball Metric Stout.

 

The World Beer Awards’ judges tasted through more than 2,200 entries from over 50 countries in 2020. The judges blind tasted and scored the entries across three rounds of judging. Traditionally, all tastings are held in person, but this year the beers were brought to the judges. Black-wrapped and sent across Europe, Asia, Canada and Brazil, the judges tasted the beers at home and connected for each session over Zoom.

Here, and in #8, we'll be trying a few pale ales that could well help a beer drinker make the move from mass produced stuff to a really good beer. As it happens, the quartet are Irish, and each is very approachable indeed. If you're a bit unsure as to where to start, why not try the Ambush and then move on back up to the Howling Gale (my favourite of the four).


Eight Degrees Howling Gale Pale Ale 4.5%, 440ml can, Bradley’s of Cork

With its familiar label statement of Fresh Citrus and Grapefruit, Howling Gale blew into our lives about nine years ago. We’ve changed a lot since then but not this superb ale, one they got more or less correct from the off, and is still their most popular beer.

You get a smack around the gills, they say, when you sup this refreshing ale. But nothing fishy about this Ballyhoura hero, perfectly formed from day one. Pleasant citrus aroma from the Cascade and Simcoe Hops, these hops and sweet malt harmonious on the palate and the bittering hops are waiting for you at the finalé. No shortage of carbonation in this mid-amber ale and no regrets when you pull that tab and pour. Enjoy - you’re in good company.

They say: This Irish Pale Ale delivers a refreshing crisp smack around the gills. With a pleasant grapefruit citrus aroma from Cascade and Simcoe hops, it has a biscuit malt sweetness, followed by an attractive bitter finish.

Strength: 4.5% ABV

As always, Eight Degrees come up with Food Pairings:  Pale Ales are traditionally seen a great foil for spicy food – there’s a little bit of sweetness there that will cut the chilli burn – but don’t miss the chance to have Howling Gale with fish and chips (or in the batter for the fish!). It’s well worth trying with a Cashel Blue and Broccoli Gratin, the bright citrus notes act like a squeeze of lemon with smoked salmon or pair it with semi-soft, washed rind cheeses like Milleens, Durrus and Gubbeen.

12 Acres Pale Ale 4.6abv, 500ml bottle, SuperValu
This golden Pale Ale is the flagship beer from the 12 Acres Brewery in County Laois. Our Land to Your Glass is the logo here, based on the fact that all of the water used and some of the barley comes from the family farm.
Mid-amber is the colour, slightly hazy and not that much carbonation going on. The white head stays for a while but soon contracts to a thin disc. Aromas are modest. 
Their own plus “a small quantity of three other European speciality malts” add texture and a sweet caramel flavour on the palate before the three American hops (Cascade, Willamette and Citra) get their say towards the end.
They say the beer has more emphasis on the malt flavour than a traditional APA, has a distinctive American Pale Ale bitterness and citrus flavour. “Our pale ale is also dry hopped to give a lovely tropical fruit aroma to the finished beer. Best served 6-8 degrees. It goes great with spicy foods!”
Wicklow Wolf Elevation Pale Ale 4.8%, 440ml can Bradley’s of Cork
Nice bright amber colour with bubbles rushing to the white head that soon fades away. A mildly hoppy aroma. The hops edge it on the palate, good flavour overall and a very easy-drinking beer, welcome as a once off or for a session. Another excellent effort, a more or less perfect Pale Ale, from the Wolf.

They say: An incredibly drinkable Pale Ale bursting with juicy fruits of pineapple and grapefruit from an abundance of hop additions. Refreshing.

Food pairings: roasted or grilled meat.
Cheese Mild or medium cheddar.
Serve at 8 degrees. It is unfiltered, unpasteurised and the IBU is 40.
Hops: Mosaic, Mandarina Bavaria, Calypso
Malt: Pale, Cara Ruby, Melano, Wheat.


Trouble Brewing Ambush Juicy Pale Ale, 5.0%, 440ml can, Bradley's of Cork

This is a hazy beer (little evidence of carbonation) with a light straw colour, and a soft white head that slowly sinks. Exotic fruit aromas, mango and pineapple, hops too, in the mix. And then much the same fruits combining delightfully on the palate, this juicy pale ale, with its moderately hoppy backbone, makes you stop and take notice. 

You’ve been ambushed. So, sit back and relax with each silky juicy mouthful (make that each sip - you’ll want to let the magic linger), as you’ve got one of the best of class in your hand.

Malts used are Irish Pale, Oats (credited with imparting the smoothness), Carapils and Crystal while hops are Mosaic, El Dorado and Citra.

Trouble Brewing is one of a small number of Irish breweries producing quality craft beer in order to offer people an alternative to the large multinationals, that spend more money on advertising than on ingredients, and specialise in bland.

Kinnegar White Rabbit Session White IPA, 4.5%, 440ml can 
Citrus leads here and there is little enough evidence of the clove and banana that is prominent in some wheat beers in this mid-gold  cloudy IPA from the innovative Donegal brewery. There’s a generous fluffy white head that lasts a fair bit. 

Big score for the optics and no let-down in the mouth where the malt and hops get together in an impressive juicy fruity amalgam. A lovely balance indeed and an excellent dry lip-smacking finish with a slight bitterness in evidence. Second can appeal for sure and the session is underway!

They say: This is a classic American wheat beer that blends fruity malt with fruity hop flavours and opens them up with a voluminous, puffy white head.

Like most of the new wave of independent Irish brewers, Kinnegar still have a few years to go to their 10th anniversary. Yet there is something so real about the overall character of their Donegal beers that the word authentic (a sense of place, a sense of the genuineness behind the local enterprise) surfaces as you sip. 

 “We don’t filter or pasteurise, and we let our industrious little friends, the yeast, carbonate the beer naturally during fermentation.” There may be a bit of sediment, so pour carefully but if some ends up in the glass, don’t worry about it.


The White Hag “Ninth Wave” New World Pale Ale 5.4%, 330ml can. 


Like their Donegal counterparts, Sligo’s White Hag have also turned towards the Atlantic for this New World Pale Ale, named after the (mythical) Ninth Wave that formed a formidable barrier for anyone wishing to cross over to New York and Boston.

Colour is a bright amber, no shortage of bubbles rising through the mildly clouded glass, topped with a short-lived white head. Aromatics are mild also, apricot, mango and citrus in there. 

Quite a greeting on the palate though, creamy feel and insistently fruity from the American hops but all is kept in check as this balanced effort makes its way towards a very satisfactory finalé indeed.  Lively, flavourful and very drinkable indeed. Another for that second glass designation!

They say: “We are a modern independent craft brewery from Sligo, on Ireland’s Wild Atlantic Way. We brew innovative and groundbreaking beers, inspired by ancient and classic styles.” 
They brew a good lot of them! The able and masterly brewers here ensure a lot of them are good.


8 Degrees “Glen of Imaal” Oatmeal Pale Ale 5.6%, 440ml can

No secret that the crew of Mitchelstown’s Eight Degrees are an outdoor lot. So no surprise that they choose to celebrate Ireland’s highest mountains - Irish Munros are peaks over 3,000 ft. including their local Galtymore - with their latest series of specials. And #2 in their adventures at altitude is Lugnaquilla, yet the beer is named for the Glen of Imaal, the valley below the Wicklow peak.

Colour is a pretty clear amber with a white head that stays around for a spell. Aromas are shy (if exotic) but it’s a different story in the mouth where the intense flavours, citrus prominent, are wrapped in silky mouthfeel,  a balanced thirst-quenching drop, as they say themselves, and a fitting reward after a climb up (and down Lugnaquilla) or the steps up to the barbecue. Slainte!

They say: The star of the show is new hop HBC-692, daughter of Sabro, with intense flavours of grapefruit pith and pine resin. The oats provide a silky mouthfeel which, when combined with these aromatic hops and a rounded bitterness, provides a balanced thirst-quenching drop after a rewarding climb up the Wicklow massif.

By the way, Eight Degrees are close to unique among Irish brewers in going to some length to suggest Food Pairings for their beers. The Belgian breweries seem well into this but even they would find it assez difficile to match the culinary expertise of Caroline Hennessy whose suggestions follow. I wonder is the co-author of Slainte preparing for a revised edition! (I think I’ve dropped that rock down the well before; there was no splash then!)

“The fruity notes in this would play very nicely with a blue cheese like Cashel Blue. Even better, put a slice of that cheese on a burger and see how Glen of Imaal Oatmeal Pale Ale works with a juicy burger: the fruity hops have enough bitterness to balance out all the blue / meaty umami flavours. Spiced mushroom tacos are a great match, the tropical notes in the beer complementing the flavours in Mexican food. Bring a citrus cake – lemon and buttermilk cake or orange polenta loaf – to the table and see how the flavours work beautifully together.”

Bosteels Pauwel Kwak 8.4%, 33cl bottle


This a beer that, once tasted, you cannot ignore. No more than you can ignore a pebble in your shoe. The Kwak though is much more of a pleasure. Belgian beers have considerable clout and sometimes the less worthy among them get a free pass. We had the Kwak’s companion, the Tripel Karmeliet  here recently - and this one, just like the Karmeliet, is worth the admission.

It is a “Heavy Special Amber” and dark amber is the colour, the coffee coloured head is less than full but is inclined to hang around a fair bit before thinning to a lacy disc. Aromas are of the warm earth, some coffee notes in the background. It has an amazing palate, complex, malty, toasty, caramel, yeasty and warm. More or less seamless from there to the finish. Unmissable!

In common with all Bosteels beers, it is brewed with natural basic ingredients: barley malts, mineral water, wheat, hops and white candy sugar.
In the 18th century there was a very well-known brewer in the Dendermonde area; his name was Pauwel Kwak. He brewed his own beer, which was dark and heavy.This story inspired a brewer from nearby Buggenhout and since the 1980s the Pauwel Kwak is brewed by Brouwerij Bosteels, which also produces the popular Tripel Karmeliet and the DeuS Brut des Flandres.
They say: This beer is a worthy dining partner and also has its uses in the kitchen. It will make a perfect pairing with, for example, pigeon and pickles. You can have both at the same time thanks to the Kwak’s fine caramel.This complements the zesty taste of the pickles and softens it slightly so it will not overpower the pigeon.

Very much into seasonal when it comes to my food. Not so much when it’s beer. Especially when there’s a can handy, a can from Eight Degrees called Orange Ball 5. It’s part of their 8th year anniversary celebration series called Rack ‘Em Up and intended to be a summertime sup.

But I come across it late-ish, on a December night on the run-in to Christmas, spot the 3.9 abv and I say to myself that this Fruity Pale Ale fits the bill. Athgarret Malt, Ireland’s newest maltsters, as suppliers of the wheat and oats, get much of the credit. Credit too though to the brewers at the Mitchelstown brewery who came up with this fruity sessional pale ale, silky sunshine on a cloudy day. Just the job to fit this Bill, late on a windy Friday night. A juicy wet sunshine-ey kiss, declares the label. A kiss for all seasons, methinks.


Staying a bit out of sequence here, all the better to draw your attention to the Blue Ball, number 2 in the series. This one’s a coffee infused Vienna Lager (4.50%). You usually come across coffee in stouts but the Eight Degrees boffins went outside the box - they usually do - when they got together with local coffee roaster Badger & Dodo.

I admit to be being a little sceptical when I pulled this one. So it was quite a pleasant surprise when I found the combination worked a treat both on the nose and on the palate. The balance is just spot-on, another winner racked up in North Cork. By the way, who is Dodo? I have met the badger, better known as Brock.

The Christmas dinner was excellent, both food and company, and gave me a chance to pot the black. The  #8 Black Ball Metric Stout that is! Aged in Jameson whiskey barrels, the big bold (11.5%) stout proved quite a match for the Christmas pudding.

For all the excellent beers in the Rack ‘Em Up eight, my favourite remains the Howling Gale Irish Pale Ale. It is the first beer Eight Degrees ever brewed, back in 2011. Perfect then. Perfect now.

Just going back to Christmas Day. We had quite a few visitors. Some were driving so I made sure to have a few non alcoholic beers in the house. The newish Dungarvan Brewery Main Sail was one and that went down well. One guy enjoyed the Erdinger but no one tried the Russian Baltica.

The big alcoholic attraction though was the Chateau Turcaud "Cuvée Majeure" Bordeaux blanc, a beautiful wine in an impressive magnum, a present for our 50th earlier in the year!

As usual there were bubbles - of various types. And here a local Elderflower cordial, made by Maura’s Kitchen and bought at Killavullen Market, came into its own, drawing lots of compliments. Sometimes, it was mixed with sparkling wine and, where the request was for no alcohol, with sparkling water. Really made quite a favourable impression all round.


Bīru, appropriately enough since it is the Japanese word for beer, is the name of a premium light lager with an abv of 4.3%, which also proved a favourite. It is a Japanese inspired rice beer;  ingredients also include water, malted barley, maize and hops and is also gluten free.

It certainly tastes pretty well with a very smooth mouthfeel. Easy-drinking, light and refreshing, with very little bittering, it is an ideal session drink. It is contract brewed by Cork’s Cotton Ball Brewery.

As you probably know, the 9 White Deer Brewery, from Baile Bhúirne, have a full range of Gluten Free beers and their Stag Bán ale was very popular with our guests. 


So there you are. More than one way to a Happy Christmas! Now here’s to a happy 2020.
