TRIGON HOTELS AND COPE FOUNDATION GROW RELATIONSHIP WITH NEW SENSORY GARDEN

A new sensory garden is being created at Cope Foundation in Montenotte, Cork. The project is a collaboration between the charity and Trigon Hotels. Cope Foundation is the hotel group’s charity partner for 2021. 


The garden, which is located on previously unused ground next to Beech Hill Garden Centre, will include features and plants that stimulate the senses through touch, sight, scent, taste and hearing. Volunteers from both Trigon Hotels and Cope Foundation have agreed to tend to the garden.


Raised beds have been constructed and have already been filled with herbs, plants and flowers. There are plans to further develop the garden during 2022 by adding water features and more vegetables and herbs.  


Kathleen Linehan is the Strategic Director of HR Trigon Hotels, she says the garden is a really exciting project, “It is important to us that we develop long-lasting relationships with our charity partners. We want to raise much needed funds for Cope Foundation and Ability@Work but we also want to support them in other ways as well as learning new skills together. The idea for the garden came from our shared interest in growing our own food and gardening. We were delighted to be invited to visit Beech Hill Garden Centre and Roots cafe in Montenotte and during our walkabout we spotted a patch of ground that looked perfect for a sensory garden. It was wonderful to spend a day outside planting with volunteers from both organisations.”


Shane O’Sullivan is a student at Cope Foundation and took part in the planting day, he says, “I really enjoyed the planting and meeting the people from Trigon Hotel. I hope the plants and seeds we planted will grow well and I will look after them”


Jo-Anne Higgins is the Communications and Fundraising Manager with Cope Foundation, she added, Various lockdowns curtailed our progress but we were able to finally put our plan into action during the autumn. We cleared out the space and replaced the raised beds making them ready for the Trigon Hotels team and horticulture students to fill them with plants to delight the senses. Our expert horticulturists from Beech Hill Garden Centre coordinated the planting day and are kindly overseeing the various initiatives. We have also planted some micro vegetable seeds in the Garden Centre's polytunnel and we are looking forward to watching these grow. We have big plans for spring when we can further develop the sensory garden, plant more vegetables and herbs together and use these to create delicious dishes.”


Denis Mangan is a horticultural tutor with Cope Foundation, he says, “Horticulture is a hugely popular subject in our Further Education and Training Programme and has always played an important role in Cope Foundation's  skills development work. It is great to have the opportunity to grow together with the team in Trigon Hotels - we are learning from each other and having a shared interest in plants, herbs, and vegetables means we are doing something we all enjoy. We all had a very pleasant morning when planting up the new sensory garden at the Beech Hill Garden Centre. Our ongoing activities will be of tremendous benefit, allowing for opportunities to engage in physical activity and social interaction. We at Cope Foundation are looking forward to a busy sustainable spring with the growing of fresh healthy organic produce with the Trigon Hotel team.”

A Superior cask-aged whiskey porter that will please the most discerning of whiskey-loving palettes. That is the promise from the producers! A promise that is kept.


This cask aged Imperial Porter, made by the Brehon Brewhouse using whiskey cask from Two Stacks, has a dark black colour with a thin enough tanned head. The aromas are modest, compared to my expectations. But the palate, wrapped in warm whiskey notes, has no such modesty. The rich porter here unveils a tasty tempting package of roasted malt, dark chocolate with dark fruits, vanilla and much more as it meanders across and then down the throat for a memorable finish. Bring out the Christmas fare!


They say: Whiskey-aged porter from a collaboration with our good friends at TWO STACKS using their freshly emptied single malt cask to mature our brew. Of course, getting it right took a few tastings with the lads. This is a superior whiskey cask-aged imperial porter that will please the most discerning of whiskey-loving palettes. Whiplash The Sup Porter 5.0%, 330 can Bradleys



Well, The Sup is a glass of the black stuff with a classic tan head.


And there’s more! The aromas, chocolate and caramel, are a gentle and pleasant introduction. The firm shakehands come in the mouth, again chocolate and caramel, but now more assertive, again in the most pleasant of ways.


As with many porters, it is more about the malts. They say: This porter has been on our “to brew” list for years now and we decided it was finally time. Porters to us are all things softer, more coffee and dark chocolate and lower bitterness than their stout cousins so we focused on some more modern malts to achieve a more intense nose and flavour in this one. The main star in this is CaraBohemian – a kind of rich and decadent Czech Brown Malt but it oozes fruity Bournville dark chocolate with a hint of coffee in there too. Melanoidin for that toasted flavour, Dark Munich for the sweet bready goodness and Special B to round off the whole affair with that roasted caramel with cherry sweet nose. Restrained roasted malts, more for colour than bite and a light Pilsner malt base leaves room for all those parts to do their thing to their fullest extent.

Not too sure about the Bournville bit; that bar was a favourite of mine (back in the day before the day!) and I can’t say I recognise it here. Nice soft finish though with a hint of sweetness. Been years since I had a bar of Bournville! Must try one soon.


Bournville or not, this is delicious, quite a sophisticated porter. Should be versatile at the table, morning with pancakes and Nutella, lunch with Smoked Scamorza by Toonsbridge, 

evening with a few squares of a certain chocolate.  


Eight Degrees Seisíun IPA 4.5%, 440 ml can


A clear yellow/amber in the glass with a white frothy head. No shortage of engaging citrus-y aromas plus a touch of malt. And malt too in the body. A crisp palate, more citrus before a superb hoppy and refreshing finish. Crisp, refreshing and aromatic, they claim and once again Eight Degrees get it spot-on.


Originally brewed as a low-alcohol sipper for beer festivals, this sessionable IPA has transcended its origins to become “one of our most popular beers”. “Woven deep into the fabric of Irish society and tradition is the seisíun, an informal coming together of people in a pub – over a beer – to play music, tell stories and enjoy each other’s company. For the best kind of seisíun, you need a low-alcohol beer, something that has lots of flavour but is not too high in ABV.”

While the session may be a popular term in the Irish pub lingo, the idea of a session was there long before that use of word. When I was growing up, I often heard two older guys (not always the same two) meet and chat on the road, especially on a Sunday. And one would ask the other: “Are ye going for a quart?” While the quart (a quarter of a gallon) meant two pints, I think the term was used just in case one of the wives was listening at the other side of the hedge. In her early days as wife, she might well think: “Two pints isn’t too much!” But the word was pronounced with an unseen wink and more than likely, at least one of the lads, had more than a quart in mind. And that is why my series on craft beer is called Quart of Ale!

Geek Bits:

Style: Session IPA
Malt: Irish pale malt, Carapils,
Hops: Mandarina Bavaria, Citra, Amarillo,Simcoe
Strength: 4.5% ABV
Bitterness: 44 IBUs

Food pairings via Eight Degrees:
Lots of flavour and low alcohol make this a perfect beer to serve over a period of time at a party, relaxed gathering or – as we’ve tested! – beer festival. An ideal pairing is pizza, particularly anything that includes the fabulous chorizo or salami from Gubbeen Smokehouse, as the beer crisply cuts through all that meaty, cheesy gorgeousness with each sip. On the lighter side, try this Seisiún IPA with a St Tola goat cheese and fresh beetroot salad, tossed in a ginger and lime dressing, and see how the hop bitterness complements the citrus.

Kinnegar 20÷2 Anniversary Rauchbier 5%, 440ml can, Bradleys



Colour is dark brown with a touch of copper. ABV for this style is between 5 and 6 so Kinnegar are within the range. And the aromas are also typical: smokey. Some people even refer to smoked beers as “bacon beer” because of the smoked flavour.


And that smokiness continues, perhaps with a little less intensity, through the mouth and into the finish. You’d better like smoke notes!


Kinnegar don’t disclose their modus operandi but Rauchbier or “smoke beer” is a style of German lager that uses malt smoked over beechwood to impart that unique smoky flavour to the beer.


While the Germans would say that only beer brewed in the time-honoured Bamberg tradition can be considered a true Rauchbier, that hasn’t stopped Kinnegar from trying and I must say I rather enjoy the result of this 10th anniversary beer. Apparently it, and the Pilsner, both influenced the personal development of Rick as a brewer.

Aecht Schlenkerla Rauchbier Märzen is, I’ve read, the classic Rauchbier. Bamberg is, surprisingly, one of the top brewing cities in Germany, synonymous with the Rauchbier. We enjoyed this classic last April and you can check it out here.

Trigon Hotels has joined forces with businesses across Cork as part of their 12 Days of Christmas charity drive. Starting on December 13th the hotel group, which includes the Metropole Hotel and the Cork International Hotel will be giving away a series of prizes. In order to enter they are asking people to donate €5 to the hotel’s charity partner, which is Cope and Ability@Work.

 

Among the prizes are an annual pass to Blarney Castle, hotel stays at the Metropole and Cork International Hotel, a Christmas Wreath from To Have and To Hold Flowers and a Fota Wildlife Park annual pass.

Brothers, Conor and Dominic Doyle have opened Doyle’s Grocers, a traditional, old world style grocers and artisan food shop in the heart of Ballymore Eustace in their home county of Kildare. The brothers were inspired by their grandfather, Dominic Doyle who opened the first delicatessen in Ireland in the 1960’s and who owned and ran the famous D.B Doyle’s Butchers and meat processing plant in Newbridge, Co. Kildare. Aside from being a successful food producer, Dominic Doyle Senior was a highly skilled businessman and was also the owner and one of the founders of the Newbridge Cutlery factory, now known as the world-famous lifestyle brand, Newbridge Silverware.

 

Coincidently, the new micro grocery store, Doyle’s Grocers, is housed in what was an old butcher’s shop in the square in Ballymore Eustace and now, rather than the traditional rows of turkeys and legs of lamb on display the shop stocks a range of everything from cured meats to handmade cheeses, bread and cakes, fresh vegetables, speciality condiments, pickles, jams and preserves.

 

Original, vintage dressers are filled with old fashioned tins of spices and unusual store cupboard luxuries. If you are not immediately drawn to the fabulous old-fashioned tins and packaging you will be intrigued by the products themselves which include such curiosities as olive pâté, chilli infused honey, traditional lemon curd and ‘blow your head off’ inferno hot sauce. The vintage inspired tin packaging containing premium picante tuna and anchovies is as pretty as it is tasty and is testament to the brother’s quest for the unusual and the rare.

 

Local suppliers are key to the quality of the items for sale in the shop and great care has gone into sourcing local produce such as Bernard Gibney’s jams and preserves, handmade in small batches in Kildare Town. Cheeses include Ballyhubbock Farm Cheese and the most delicious, delicately fragrant, goat’s cheese made by Conor Phelan of Hollywood Farmhouse Cheese. Both of these particular cheeses are sensational and provide a veritable treat for the senses. Fresh, organic vegetables and herbs grown in Dermot Carey’s organic vegetable farm in Arsdcull in Co. Kildare are stocked at the shop as well as freshly baked bread and pastries. If you are a baker and are always on the search for the best quality flour and oats then try the flour made by Ballymore Organics which is stocked at Doyle’s Grocers. The Irish stoneground flour and porridge oats are grown and milled by James Kelly whose old stone mill is located just outside the village of Ballymore Eustace.

In true Doyle family butcher’s style, and in homage to the duo’s grandfather, the store also stocks venison steaks, cured meats, speciality sausages and black pudding such as Inch House Pudding, hand made by Máirín Byrne from Co. Tipperary. The pudding is made from an old family recipe passed down through Máirín’s family for generations.

It seems it’s not the only thing that has been passed down through the generations as Dominic Doyle remarked, “Our grandfather, Dominic Senior who I am named after was a stalwart of industry and had the foresight to open what was Ireland’s first ever delicatessen in Ireland in 1963. Even back then, he could see that people wanted in season, fresh food, not mass-produced products but speciality meats, ethically farmed and produced by local people. The farm to fork ethos that our grandfather had then is just as important now. People want to know where their food comes from, food provenance is vital. When people buy locally, they cut down on travel, they support small producers and they get great tasting, premium food that can’t be found in supermarkets. My brother, Conor and I can see a big shift in the choices people make when it comes to food, and we are delighted to be able to showcase some of the most incredible artisan produce made here in Kildare and in Ireland.”

“The Christmas pudding is not what you think,” the server smilingly cautioned as I completed my dinner order in Greene’s.

The MacCurtain Street restaurant had just introduced their Christmas/Early Bird Menu shortly after we had made the reservation. And I began to think, for a moment, of the usual Christmas stuff. Just for a moment though, as I know Greene’s pretty well at this stage and almost always what you get on the plate, while true enough to the words on the menu, is often a surprise and more often than not a very pleasing and delicious one. 



And yes that pudding and the spiced beef (we didn't include the Turkey and Ham Terrine in our choices) were a surprise.


The first surprise though was the entrance through the alley Greene’s shares with Cask. It was beautifully lit and there was even an impressive Christmas tree standing at the base of the floodlit waterfall. Covid regulations were applied without fuss and soon we were sitting in a very comfortable position, the rad alongside keeping us warm and our anticipation heating up as we studied the menu.

We picked from the €45.00 set menu, with five or six choices under each heading and also a section of sides. My pick from the “Begin” section was the Monkfish Carpaccio, with fennel textures, orange and seaweed. The dish sparkled under the lights, starry without a filter. It was truly a bright carnival of flavours and textures, the tenderly toothsome fish the stellar delight.


CL meanwhile was enjoying her Traditional Cork Spiced Beef, traditional yes but the accompaniments weren’t and the pickles, Celeriac Remoulade and truffle mayonnaise lifted the ensemble to the culinary heights. We were each off to an elevated start, more sharply aware of the possibilities contained within the sparse words on the menu.

Still, you wonder, what can they do with chicken breast, carrot purée, pancetta, kale and even with Christmassy bits such cranberry and Mulled wine jus? The answer is: a lot. Firstly this is a Twomey’s chicken, noted for its quality, and the kitchen is in top form controlling the temperature from start to finish.


And then sending a beauty to the table. It just looked appetising, more so than usual, it had the “bounce” of a fresh fish (such as halibut) and the taste was all chicken, the amazing flesh enhanced by all that came with it.

The chicken has us talking and we soon found the staff, who glided about the place serving and checking, were just as enthusiastic about it.


There was never a worry about the Braised Feather Blade, a signature dish here for quite a few years now. No shortage of the Angus Beef in its elegant cylinder form topped and surrounded by the gorgeous shiitake sauce and further supported by the smoked mash and the crispy black cabbage and a few fried potato wafers scattered like fallen leaves.


Now for the sweet session. Again, there was quite a choice, including a cheese board that will add six euro to the bill. Mine was the Christmas Pudding Parfait, with apple friand, custard and apple scotch.

Sweet and easy to eat, even after quite a meal (that also included a potato and vegetable side with each mains), this dessert was very appropriate to the courses that had gone before and much the same could be said about our other dessert, the Orange and Cardamon Set Cream Pudding, blood orange sorbet and Grand Marnier.


So having had a superb meal, with its unusual Christmas elements in their non-traditional guises, it was a pair of happy customers that walked out in to the alley, lingering to take a photo or two of the lights and trees, before heading for the mountain! By the way, we did spot Santa Claus on the way home but in a rather unusual multi-coloured coat.

BALLYMALOE FOODS COLLABORATE WITH MÓR IRISH GIN ON LIMITED EDITION CHRISTMAS SAUCE


Ballymaloe Foods has partnered with Mór Irish Gin to create a limited edition Cranberry sauce. It is the latest in a series of collaborations between the Cork based company and Irish producers and restaurants. 


Ballymaloe Cranberry and Mór Wild Berry Gin Sauce will be stocked in hundreds of supermarkets around the country including Tesco, Dunnes and SuperValu.


Maxine Hyde, General Manager of Ballymaloe Foods says, “We love collaborating with different Irish producers and we felt there was a good synergy with Mór Irish Gin.  They were very keen to do a collaboration with an established Irish food brand and when we tested their Wild Berry Gin with our cranberry sauce the flavour was great.  We always aim to bring something new to our consumers at Christmas and feel that limited edition sauces work well and were delighted to be able to work with Mór on this.” 


The Cornstore Restaurant in Cork has created a special cocktail using Ballymaloe Cranberry and Mór Wild Berry Gin Sauce. The gin-based cocktail is called ‘Naughty & Spice’ and includes rosemary, nutmeg, lemon juice and Cointreau.


During 2021, Ballymaloe Foods worked with Esquires Coffee, CoqBull restaurants in Cork and Limerick, Cornstore Restaurant and Toasted.  It began working with two Northern Ireland based businesses, collaborating with Toast Office in Belfast as well as Blend and Batch in Banbridge.


Ballymaloe Foods has also teamed up with meal delivery service Drop Chef. Ballymaloe Fiery Relish is now included in the pre-portioned ingredients for several recipes like Steak Tacos and Shakshuka.
