FREDERIC DESORMEAUX APPOINTED GROUP EXECUTIVE CHEF AT FLYNN CUSH GROUP
Frederic Desormeaux (right) has been appointed Group Executive Chef at the Flynn Cush Group, which includes Cush Midleton, Sea Church and the Salty Dog in Ballycotton. This marks a new chapter for the restaurants, which are all located in East Cork.
Frederic is currently Executive Chef at Sea Church and Salty Dog, the latter of which opened to
the public in May at the old site of Cush in Ballycotton and has seen significant footfall.In addition to its well-known classic favourites, the menu at Cush will now be offering some popular dishes from Salty Dog, including Fred’s Mediterranean Chowder, Fish & Chips,and Beef Cheeks. Diners will be able to experience the best dishes from both venues at Cush, which is an exciting development for the East Cork food scene.

Born in a fishing village in France, Frederic Desormeaux learned his trade in Paris and London before arriving in Ballycotton in 2000. He began his Irish culinary ventures there, in a fish and seafood restaurant called the Spanish Point, before moving to Greene’s Restaurant in Cork City where he further developed his cheffing skills for a number of years, receiving multiple awards, including a Michelin Bib Gourmand.
Commenting on his expansion across the Flynn Cush Group, Frederic Desormeaux said: “The culinary scene in East Cork has never been more vibrant and it’s an exciting time to be a part of it. We’ve had a fantastic few months in Salty Dog since we opened there in May and I am delighted to now bring some of the popular dishes on the menu there to Midleton. It’s a new chapter on our culinary journey.”
