My Breakfast Roll
Pancakes at the Crawford Café

I don’t often go out for breakfast but had a few opportunities recently, including one top hotel, one well established café and two new cafés: Hayfield Manor, Crawford Gallery Café, Old Bank Café and the Good Day Deli. Quite a variety of food, everything from the Full Irish to a Veggie Benny.

Pancakes, American style, are very popular. And very good also. Take those in the Crawford, for example: American style buttermilk pancakes, with delicious bacon, yogurt, blueberries and bananas and Maple syrup of course. Amazing flavours and textures. Simply irresistible!

Over at Good Day Deli, in the gardens of the Nano Nagle Place, they do superb Poached Pear Pancakes with coconut mascarpone and a drizzle of Irish honey. Another morning winner from this sustainable foods champion. And, while there, do try a glass of the delicious Mealagulla Apple Juice.

Mayfield newcomer, the Old Bank, were just bringing their pancakes on to the menu so I didn't get to give them a proper test but they looked promising and, with their excellent Lemon Curd, could well be a very satisfying combination.

Orchids, at the Hayfield, has an outstanding selection of fruit and also some interesting breads. Hotels, as you might expect, will always have the Full Irish and the Hayfield’s is excellent, the bacon and black-pudding (by Rosscarbery Recipes) a tasty feature. Then there’s cheeses and salamis, their own granola; croissants, muffins and more from their bakery and an eye-catching full size honeycomb.

Along with pancakes, various “editions” of Eggs Benedict are to be found in all menus. The Crawford’s Eggs Royale, poached eggs and Frank Hederman smoked salmon on sourdough toast with Hollandaise sauce, is very delicious too.

Over at the new Good Day Deli, the Veggie Benny is a must-try: two organic poached eggs with hollandaise sauce on sourdough, with organic kale, and tomato, topped with nut dukkah. I’m sure their Salmon Benny, also with Hederman’s smoked salmon, is excellent too.

In Mayfield’s Old Bank, their Eggs Benedict has proven so popular that it is on all day.  The Old Bank Café style sees poached eggs come on sourdough toast with hollandaise or with salsa verde and is further enhanced by a choice of slow roast tomatoes, sauté spinach and roast button mushrooms or home cured bacon and slow roasted tomatoes. 

And another breakfast dish, simply called the House Dish, has also gone all-day. This includes crispy home-made potato hash, smoked ham hock, smokey baked beans, poached egg and salsa verde or hollandaise. That hash, the potato is done rosti style, is excellent and lots of flavour come through from the other ingredients.


So there you, just four calls and lots of good stuff available. Do you have a favourite breakfast venue? A favourite breakfast dish?

* Fish rarely appears on breakfast menus. When it does, I usually go for it. Ballycotton Bay is noted for its plaice and it is a real treat to enjoy the view and the plaice at the Samphire Restaurant in the Garryvoe Hotel.

Even on a dull day, Perrott’s Bistro in the Hayfield Manor is an impressive room. And, to further brighten up the place, there is excellent food available here, both day and night. And indeed, the room is perhaps even more impressive after dark.


Scottish chef Mark Staples brought considerable experience to the Hayfield when he was appointed Executive Chef there late last year. Prior to that he had spent 16 years in Dublin's Merrion and noticed the trend towards artisan food and meets that demand at Perrotts by using quite a few local producers including Skeaghanore Duck, Bluebell Falls Goats Cheese, Rosscarbery Black Pudding and Toonsbridge Mozzarella.  It was a pretty dull day when we arrived last week but it brightened up with a warm welcome. Service was superb all through. And we got a super wine tip that saw us both enjoy the excellent te Pā Sauvignon blanc from Marlborough, a fine example of the type, full of flavour and with a long rolling finish.

It's been awhile since I enjoyed a Prawn cocktail as much as my starter: Tiger Prawn and Freshwater Prawn Cocktail with pickled Cucumber. The prawns were delicious and the pickled cucumber (seedless, skinless) was a nice touch, not just visually.

You see goats cheese a lot on local menus. And why not? We’ve got some terrific producers. CL’s starter was Grilled Bluebell Falls Goats Cheese with Oat and Almond Crust, Rocket Leaves and White Balsamic Marinated Strawberries. A few different touches here, that crust and those strawberries included, enhanced the excellent cheese from North Cork.

My mains was the Bertram Salter Free Range Chicken with Rosscarbery Black Pudding, Ham Hock and Chicken Croquette, Champ Mash, Pea Purée and Tarragon jus. I hadn't come across this particular producer before; Bertram is based in County Carlow and the product is top class and was cooked to perfection here. All the other elements played a part, especially that outstanding Croquette.
 CL loves her hake and enjoyed this Pan-seared Union Hall Hake fillet with Celeriac and Thyme Purée, Roasted Baby Onions, Salt Baked Kohlrabi, Caper Beurre Noisette. It was of course that little bit different. She particularly enjoyed the Kohlrabi and the potato crisps were both decorative and tasty!


And the little touches that make all the difference continued into the desserts. Desserts can often be very similar from one restaurant to another and are the one course I'd often happily leave behind. But no danger of that here.

CL’s was the Baked Glenilen Yogurt, Cinnamon Crumble, Strawberry and Mint Salsa with champagne sorbet while I picked the Alunga Milk Chocolate Parfait, Sea Buckthorn, Caramelized cashews, and Brown Bread ice cream. Rene Redzepi of Noma brought the attention of his fellow chefs to Sea Buckthorn and the foraged berries make a lovely syrup (may be used in yogurts and smoothies). As I say, desserts with a difference for the guests at Perrott’s.

Ballymaloe's Colm McCan has been in touch about Friday's tempting "match-up" in the Food Emporium (Brown Thomas) between Taylor's Port and Cashel Blue Cheese.

Some well priced good wines
Thought I might share the details on some decent well priced wines that I've come across recently.

In Cafe Gusto last weekend, I was reminded of the merits of Beso de Vino range imported by Wine Alliance and widely available. They are the house wines in Gusto. The white is a Macabeo and the red is a blend of Syrah and Garnacha, and both come from the Carinena region of Spain. Just checked on Bradley's Off Licence website where they are available for €10.99 a bottle.

Earlier, I had picked up an award winning white in Karwig Wines (Carrigaline). The Claude Val Vendages 2012, an IGP by Paul Mas from the Aude Valley in the Languedoc, is a blend of no less than six grapes: Grenache Blanc, Chenin, Mauzac, Chasan, Vermentino and Sauvignon Blanc. Didn't quite know what to expect when I parted with my €11.25 but it is a beauty: fruity, fresh and well balanced and a smooth, almost oily, mouthfeel. Quite a good wine at a decent price.

Next up in the WineGeese series is a wonderful tasting with John McDonnell.

John is one of the legends of the Irish wine scene and has many years of experience in the wine trade, especially in relation to the wines of Australia.
John will talk about winemaking and winemakers in the Clare Valley in Australia and will give a guided tasting of six wines from this beautiful part of the world. John has a wonderful, engaging presentation style and is deeply passionate and knowledgeable about Australian wine so it promises to be a memorable tasting.

Connoisseurs looking to expand their knowledge of wine, or enthusiasts who simply love sampling new and exciting vintages, will relish this special event on Thursday April 18th, part of a series of Wine Society evenings held in Hayfield Manor.

The evening will be hosted by Jane Boyce, Ireland's first female Master of Wines and wine columnist for Irish Tatler.  Wines on the night will be supplied by James Nicholson Wine Merchants which will focus on classic grape varieties and showcase various regions.

Hayfield Wine Society - April event


Jane Boyce is back in Cork next month

Jane Boyce, who wowed the audience ar a recent wine geese event in L'Atitude 51 (right) is back in Cork next month for the April Wine Society evening of the Hayfield Manor. The evening, on Thursday, 18th April, will be hosted by Jane, Ireland's first female Master of Wines.

Jane is a wine columnist for Irish Tatler and Easy Food, as well as writing pieces for the Irish Times, Food and Wine Magazine and other publications in Ireland, the UK and abroad.

Wines on the night will be supplied by James Nicholson Wine Merchant. Jane shall focus on classic grape varieties (probably Pinot Noir and Riesling) and will showcase relevant wine regions.

This exclusive event begins at 7.00pm. To initiate proceedings, aperitifs and canapés shall be served to accompany an introduction to the wines. Dinner shall then commence at 7.30pm. Executive Chef, Graeme Campbell, has carefully created a five course menu designed to perfectly complement the selection of elegant wines chosen to be showcased on the night.

Hayfield Sommelier, Sandra Biret-Crowley, says that connoisseurs seeking to expand their knowledge of wine, or enthusiasts who simply love sampling new and exciting vintages, will relish this special event, part of a series of Wine Society evenings to be held at Hayfield Manor. Good Food Ireland at the Hayfield

Last Wednesday, Chairman Redmond O’Donoghue welcomed the audience as The Good Food Ireland “roadshow” touched down in the Hayfield Manor in a middle of seven consecutive information sessions for its members countrywide. You may see the agenda here

Ciara Jackson heads up the Food and Beverage team at Grant Thornton and presented their recent report on the massive contribution that GFI and its approved providers are making to the Irish economy and how that role may be grown. Each visitor had a copy of the report and you can read more details of the report here

Amazingly, the report team found that almost 70% of GFI producers were unaware of Research and Development tax credits which “give an overall potential tax benefit of 37.5%” of the expense incurred. Worth checking out!

Margaret Jeffares, Founder & Managing Director of Good Food Ireland, then took the mike and gave a special welcome to two friends of Ireland from the US who were in the audience: Rachel Gaffney and Ginger Aarons.

“Five years on and we have a great group of businesses behind the GFI brand. But this is only the beginning,” summed up her optimistic speech, reinforcing what the chairman had earlier outlined about Food Tourism.

It may be the next big thing but Margaret is under no illusions and left no else under any doubt. “There is more to do.” And then she encouraged members to look out for one another which is one of the reasons they joined in the first place. “Refer customers onwards to one another ...our small staff will help, by distributing some 400,000 food tourist maps this year, half of them to Hertz Car Rental..all this helps grow your business but it is essential you play your part..we can’t do it all for you.”

The initial website has helped Good Food Ireland establish itself in the past five years but now it is time to change. And Santina Doherty revealed exciting plans for the second generation website which should be online by early Autumn.

I have seen Peter Malone of Nenagh’s Country Choice, who has been with GFI since the beginning, speak on a few occasions and just love the way he gets down to basics: buckets of blood at Jack McCarthy’s in Kanturk, spuds at the Hayfield.

He also spoke passionately about another basic: integrity. “The producer is our friend. Don’t screw him or her!” There must be an honest relationship between the restaurants/hotels and their producers and between them and their customers. Respect, honesty and fairness were his key words. The more we pull together, the further we will go.

A question and answer session then followed and before the conference broke up, members were busily making contact with one another, as if already taking the founder’s words to heart. Rachel Gaffney, who brings a planeload of Escoffiers here next April, was surrounded as she had indicated the gourmet tour would be in the Cork area and so quite a few of the local providers, mainly restaurateurs, took the opportunity to put their names down. Networking at work!

HAYFIELD IN HARMONY WITH SANTA SOFIA

Well done to Sandra Biret-Crowley, sommelier at the Hayfield Manor Hotel, and her team who came up with yet another brilliant Wine Society Evening. This time, the wines from the Santa Sofia winery  (near Verona) were featured and you’d be hard pushed to find a better set from anywhere.


You’d be hard pushed too to find a better man to put the message across than Luciano Begnoni who beguiled one and all with his knowledge of the wines and “the way he told them”; not quite the queen’s English but very very engaging. His theme was a wine for every occasion.

First up, after a welcome glass of Prosecco (Bortolotti Spumanti), was the Pinot Grigio Garda DOC Le Caldera 2010, fruity and elegant, “a wine for every day”, according to Luciano. The reds though were to prove the stars of the show but, first let me tell you that the Whisky Cured Salmon, our first course, set a very high standard that was maintained for the enjoyable evening.

Now on to the House Smoked Magret Duck Breast, with duck liver and Foie Gras Parfait, orange dressing and Toasted Brioche. The team had decided that the Ripasso Valpolicella DOC Superiore 2008 would accompany this and it was a terrific choice.

This was a wine for every second day, according to Luciano, soft and easy to drink. “Aged in Slovenian barrels for 9 months, it is not so much spicy but very fruity.” Now we were on to the “once a week” wine: the Amarone della Valpolicella DOC Classico 2006.
“Cherry and vanilla,” according to Luciano. “And black pepper. It is complex and will have a long life. Now is only the beginning.” Just superb. And so too was the dish that accompanied it: Fillet of Irish beef, whole glazed cepes and confit of Shallot, scallion pencils, black truffle scented Potato puree, red wine jus.

Next up was the sweet one: Recioto della Valpolicella Classico 2007. Luciano: “This sweet wine is difficult to produce but it is well balanced, sweet beginnings, clear to the end. After 12 months in French oak, it has a nice complexity and hints of cherry, wonderful with chocolate.”

We found instant confirmation as the Hayfield served up Chocolate Marquise with Griottine Cherries, Honeycomb, Crystallised Pistachios and Cherry Cappuccino. “A great combination” as Luciano had forecast.

Still time for one more wine: Montegradella Valpolicella DOC Classico Superiore 2008. Made from the same grapes as the Amarone but with an ABV of 13.5 as against the massive 15% of the Amarone. It was a perfect fit with the plate of Irish and continental cheeses.

Luciano was accompanied to the dinner by Donie O’Brien, Commercial Manager of the Erne Drinks Company that distributes the wines here. Donie, who spent 15 years with Heineken, was also in top form and indeed the two were quite a double act! A very likeable duo, let me add.

So thanks to Santa Sofia and their reps and to Paul and Ciara of the Hayfield along with Sandra, Orchids Sous Chef Stuart Bowes and Executive Chef Graeme Campbell for a superb evening in a lovely setting.

Sommelière Sandra Biret-Crowley, who did some great work behind the scenes in organising the event, will have the help of Donie O’Brien from Erne Drinks Company when the next dinner takes place on February 23rd. Donie’s visit also signals a change of country as the wines from the awarding Santa Sofia winery in Italy will take centre stage on this occasion.

With a hell of a lot of acidity expected in next month's budget,  Wine Australia's Johnny McDonnell (right in pic) reckons he has just the thing to balance it up!

The Rhone valley is synonymous with terrific wines and the area will feature strongly at the Hayfield Manor Wine Society Dinner in November. Enjoyed my trip down there that this summer, stopping at such iconic wine villages as Gigondas, Rasteau, Vacqueyras and at Chateauneuf de Papes itself. Now, I’m looking forward to seeing Jean Louis Smyl of Famille Quiot at the Hayfield.

The first Hayfield Manor Wine Society evening will be held on November 10th with a program of exceptional wine dinners compiled by Sommelière Sandra Biret – Crowley and Jean Louis Smyl of Famille Quiot (Rhone Valley).

This special four course wine dinner begins at 7.00pm with aperitifs and an introduction to the region’s wines. Dinner is € 79.00 per person and includes a 5 course menu specially created by the Executive Chef, Graeme Campbell, to complement the 5 different wines. SEAFOOD & SAUVIGNON AT HAYFIELD MANOR

On the following evening (May 17, 5.00 to 7.00pm), in OUZOS Bar and Grill, 39 Main Street, Blackrock, Dublin, Neil Ellis is your host. There will be a walk around tasting complete with some delicious seafood canapés.  Neil will be on hand to answer questions on his wines. Tickets are €15/head or €25 for two.

This will be followed, at 8.00pm, by a Winemaker’s Dinner. Neil will guide us through a 4 course meal designed by our Chef Raouf to complement his wines perfectly. €60 a head to include wine with the meal.
