The Palomino grapes for this Bodegas Cesar Florido Fino en Rama come from the prestigious Pago de Miraflores vineyard. The wine is aged slowly under flor in the cellar solera. From one special cask (Bota No 22) – bottled to order, making 600 halves – without filtration or fining.


Serve this in a clear wine glass and enjoy the golden colour. And that glass will also enhance the amazing briny and saline aromas and flavours, with a characteristic biscuit-y yeastiness. 


The professional advice is to drink it chilled though, personally, I’d be careful of overdoing it. I started this bottle at a cool room temperature and thought I got more out of the first glass, both in aroma and flavour, than from the second (poured after some time in the fridge). Different strokes for different folks!


Don’t rush this beauty, a sip will go a long way. I remember that tip from César Saldaña, Consejo Regulador Jerez, then (2011). While speaking at an event in Ballymaloe he said: When drinking sherry with your meal you should always have a glass of water at hand. When you want to “wash” down the food use the water and then take “a few drops” of the sherry as it goes a long way!


The en rama approach showcases a different expression of sherry’s potential. Bottled with minimal or zero filtration and released seasonally, en rama sherry offers a much closer approximation of what the wine would have tasted like in its natural state, taken directly from the cask, with all it aromatic intensity, fullness of body, and essential flavours intact. En Rama certainly broadens the already wide potential of Sherry.


En Rama is a relatively recent development in sherry as importers Le Caveau point out: Up until recently (with a few exceptions), the only viable way to taste sherry en rama was to go to Jerez, or one of the other Sherry towns in the ‘Sherry triangle’, visit the bodegas, and taste the wine poured directly from the cask. The en rama version offers the more complex drinking experience: it’s pungent and saline, with notes of yellow apple, green olives, and a hint of almond, along with a corresponding fullness of body that somehow manages to be bracingly acid-driven and fresh.”


In the early days of en rama in these parts, word went out that it must be drunk on purchase as it would rapidly spoil. In fact, whether to drink or keep is a personal choice. ‘Not all en rama wines necessarily improve, although the best wines age really well and last many years.’ - Decanter Oct 2020

GAIA Brich Piemonte (DOC) Barbera 2019 14.5%

Barbera, according to Wine Folly, is the quintessential ‘wine of the people,’ it is meant to be enjoyed young — and it’s cheap! Italy is Barbera’s original home.


The best of it, including our GAIA produced Brich, comes from the Piemonte region. Colour is a fairly deep red. Aromas are intense, plum and cherry, lots of promise here. On the palate, it is fresh-tasting (meant to be drunk young), lots of acidity. Light and lively rather than the rich and smooth that you might expect. The fruit (including touches of blueberry now) and slight spiciness from the palate continue through the long and satisfying finish. Well made (well priced too by the way) and Highly Recommended. 


Le Caveau, who import the wine, say: Brich is a wonderful Barbera, grown on the hills of Montferrato in Piemonte.  On the palate, the wine feels free and natural. Brich saw a short 12-hour maceration in concrete vats, 70% destemmed, fermentation with native yeasts, aged in concrete vats for 9 months, neither fined nor filtered and a mere 2mg of SO2 added at bottling.” 


AGRICOLA GAIA is a collaboration between Fabrizio Iuli and Eric Narioo (Vino dio Anna, Les Caves de Pyrene) in hilly Monferrato region of Piedmont. The grapes for this Barbera come from the lieux-dit “La Tina”, belonging to Fabrizio’s family for generations, formerly part of their old winery. The vines are 30 years old plus, and had been abandoned for 15 years before Fabrizio took them back.

Christmas is nearly upon us and that means preparations are ramping up. It's going to be a Christmas like no other (except maybe last years!) but the small things will make it special. Killavullen Farmers Market has their regular market this Saturday 11th December from 10.30am to 1pm followed by their famous Christmas Market the next weekend on Saturday 18th Dec from 12pm to 4pm. Be sure to come along to both markets as it is your chance to beat the crowds in the towns and cities. It is also a great opportunity to not only get some fantastic, unique products and gifts, it is also a great way to support small, local businesses and families.

 

All regular stall holders will be there as usual, along with a number of seasonal producers. You will find plenty for the festive season ahead from staples to seasonal veg to unique gifts, all from local producers. One of the oldest farmers markets in Ireland, now into its 20th year, the regular Saturday market is in the grounds of the Nano Nagle Centre, on the main road between Castletownroche and Mallow with plenty of parking. The market is continually evolving and continues to surprise each week!

 

Regular stallholders have a range of products from locally grown vegetables all in season, handcrafted baked goods, Arbutus breads and pastries, jams, chutneys and cordials. There is a fine selection of smoked salmon, fresh raw milk and yoghurts. You can also buy a free range organically reared ham on the day and other goodies.

 

Killavullen farmers market is a great spot to pick up crafted goods including knitwear, kids toys and wood turned products. The second hand books are a must for any reader. All books cost €1 and donations of books are also gladly accepted.


There is plenty of parking and the market is carefully laid out to ensure ample social distancing.

Hassett's of Carrigaline are perhaps best known for their freshly baked artisan breads but they also produce a wide range of products, including luxury desserts, cakes for all occasions, as well as award winning biscuits, cookies and crackers, all widely available around the country.

Michael Hassett started baking in 1984 and went on to open his very first shop in 1988. The firm now has three retail outlets: Carrigaline, Douglas Court and the English Market.

Custard Slice, another favourite here.

And it was in the English Market that I felt my sweet tooth on alert as I passed a very tempting display of their small cakes, along with lots more of course. But the colourful little pastries immediately got my attention. And I headed off home with a few including our current Taste of the Week.

They are strong on cheese cakes so perhaps it was no wonder that the Bailey's Cheese Cake was the one that got the nod as Taste of the Week, followed closely by the Custard Slice. They have a huge variety, the quality is there, so it is hard to go wrong. It is easy to find your own taste of the week in that colourful display!

Dungarvan Coffee and Oatmeal Stout 4.7%, 440ml can, Bradleys


Coffee is promised and Dungarvan Brewing deliver with this latest edition (the first to be canned) of their always much-awaited seasonal Coffee and Oatmeal Stout. Coffee is in the short-lived tan coloured head. Smell it and also stick your finger in for an early sweetish taste!


If you were in the brewery during production, you might well have been thinking of taking a nose dive into the100 litre pot of the Coffee House Lane Ethiopian, the coffee used for the 2021 edition.


I’ve been a fan of this Christmas stout since its first appearance. And still very much a fan after my initial few sips of this one. It is as smooth as ever with citrus and berry notes from the coffee giving a lift and add a rich warmth. 


Now that I've finished it, I'm delighted to say that this is one of the very best of the style. Lots of big bad stouts out there with alcohol muscle ripping into the double figures. But this one is the prize. Keep your senses on it, its sleek smooth elegance, the gorgeous aromas and flavours and the sheer pleasure of its easy-going company. Make a Christmas date with Dungarvan!


No pairing done here yet but they suggest it’s great with earthy casseroles and dessert. It is can conditioned - expect a harmless yeast sediment (I didn’t notice any).

Malts - Pale, Chocolate, Munich, Oats. Hop: Challenger; Adjunct: Coffee.


They say: Our head brewer, Cormac O’Dwyer believes that it takes quality ingredients, time, care and attention to detail to create the perfect brews and this is the methodology that he employs when brewing our Dungarvan beer.


All the beers are traditionally brewed and bottled, canned, kegged and casked on-site in Dungarvan, Co. Waterford made using only four ingredients – barley, hops, yeast and water. No chemicals are added to the beers, they are unfiltered, unpasteurised and vegan-friendly.

Over 330 years ago, in 1690, Coffee House Lane, adjacent to the then busy trading port of Waterford, had what is long believed to be Ireland’s first ever coffee house. Green Coffee was traded at the port, then roasted, brewed and sold at John Aikenhead's Coffee House on what became, Coffee House Lane of Waterford. Nowadays, the Bergin Family have a strong reputation in coffee roasting in the South East and carry on the Coffee House Lane tradition. More here.  



O Brother “Sipping Soma” Single Hop El Dorado IPA, 5.6%, 440 can Bradleys

O Brother Brewing “is all about brewing full-flavour beers..”, they declare.


This single hop is El Dorado, quite a versatile one, excellent as a bittering hop and also brings bright tropical fruit flavours and aromas of pineapple, pear, watermelon, and stone fruit. No wonder El Dorado has become a fan favourite in hop-forward styles, according to growers Yakima Valley Hops.


Colour here is a hazy lemon with a frothy enough white head that hangs about a bit. Aromas are fresh and fruity. Fresh and fruity too on the palate, juicy tropical stuff. Oddly enough, after the build-up of El Dorado’s qualities, there is no pronounced bitterness. But there’s a decent enough finish.


The brewers are well into their glasses and they have an impressive set available on their website; must say I rather fancy the middle one below.

Brehon Brewhouse Killanny Red 4.5%, 440 can Bradleys



This red ale from Brehon is a very dark red indeed, close to black. Aromas of the malt are evident. And it is malt that also dominates on the palate. Pretty well balanced too to be fair, as a tart touch plays a role towards the end. Not bad at all!


The label indicates that this “traditional Irish ale…. hopped with Magnum and Williamette….is great on its own and just perfect with BBQ red meats, lamb, stew, roast beef, black pudding or mature cheddar”.



Brehon Brewhouse Blonde 4.3%, 440 can Bradleys



This white-topped blonde has an attractive gold colour. Aromas are on the weak side, weak hints of citrus. More assertive on the palate, quite refreshing with a malty biscuity finish, dry on the lips. 


This has been hopped with Magnum and Saaz, neither of which is noted for its bittering qualities. Brehon recommend their Blonde with white fish, shellfish, BBQ chicken or food from the Mediterranean, but equally as enjoyable on its own.


They say: Oh, to be an Irish clansman. From the sixth century, Brehon law decreed that every local kingdom have a brewery, and every brewer have “a never-dry cauldron, a dwelling on a public road and a welcome to every face”. They were to be open 24 hours a day, offering food, drink and song.
