Great buzz in Greene’s Restaurant on Tuesday evening as guests strolled in past the waterfall, wondering what ace chef Bryan McCarthy had in store for the May Food and Wine Magazine Gourmet Evening. Wondering yes, but no worries as Bryan is one of the very best and he underlined his reputation with a stunning multi-course meal, based almost entirely on local produce.


We were warmly welcomed and soon we had either a glass of fresh and crisp Prosecco (Coldigiano) or a Blackwater No. 5 Gin (with a new Irish tonic called Poacher's Well) and then the studying of the menu began.
Before the meal began, Clyde Sowman of Marlborough was on his feet introducing us to two of their Walnut Block Sauvignon Blancs. Theirs is a small family run vineyard and since 2005 Clyde and his brother have taken over a small parcel, a special parcel with old Walnut trees where they farm organically.

He had big thanks for “the amazing people of Tindal’s” before telling us how the warm days and cool nights of Marlborough are ideal for preserving the flavours and acidity of the fruit. “Organic was a bit of a struggle at first but every single year it gets better and better. It was a good move… working in harmony with nature.” He explained that the Collectables, with its fruit and acidity, was great with lighter foods, the Nutcracker, with its deeper flavours, for heavier dishes.

We then started - the place was full - with a selection of Greene’s Seasonal Snacks: Cheese & Onions crisps; Ballymakenny Farm Potatoes, Coolea Cheese Fondue and Leek Ash; Ardsallagh Goats Cheese, Panko, Beetroot, Walnut; Crispy Fish Skin, Apple Cider Vinegar, Squid Ink. All delightful but that crispy fish skin was something else.

Starter one was a delicious ensemble: Mackerel and Crab, Preserved gooseberry, Wild Seaweeds, Nasturtium Leaf, Radish, Fennel, Orange, Cuckoo Flower. This was matched with the Walnut Block Collectables Sauvignon Blanc 2015.
The next plate was another gem, on the plate and on the palate: Tim Yorke’s West Cork Asparagus, Air Dried Cured Beef, Shandrum Cheese, Asparagus Salad Cream, pickles, Land Cress, and Smoked Almond. Wine here was Walnut Block Nutcracker Single Vineyard Sauvignon Blanc 2014.

Time for a little break now and a palate cleanser, an espumante of Lychee, Lime and Matcha Green Tea. Clyde was on his feet again introducing us to a pair of their Pinot Noir. This grape “is a bit of a baby” he said. “Like all good Pinot, it has be hand-picked.” The temperament of the grape is not the only risk they take as these wines “are one hundred per cent Wild Ferment”. Great results but it is “riskier”.
Bryan McCarthy took a moment from the kitchen to speak and told us that it wouldn't be a dinner in Greene’s without a contribution from Kanturk’s Jack McCarthy and that was in our very next dish: Free range Pork Belly & Jack McCarthy Black Pudding, with green apple, cider and celeriac. The wine was the Walnut Bock Collectables Pinot Noir 2014. This has spent nine months in oak and proved an excellent pairing.

The next Pinot Noir was the Nutcracker Single Vineyard 2014, a favourite of winemaker Clyde. “It is complex, silky, fine tannins, as close as you can get to Mother Nature. … If enough work is done in the vineyard, the wine-making will be a cinch. Just two ingredients in these wines, the Pinot Noir grapes and a minimum amount of sulphur.” The wine is treated to 12 months “in top of the line French oak”.
A gorgeous wine and a terrific match with another highlight: Skeaghanore Duck, wing to beak (including heart), Kilbrack Farm Organic Vegetables, Wild Garlic, Pickled Ballyhoura Mushroom, Hedgerow jus. Fantastic produce from West Cork and so well handled by Bryan and the team at Greene’s who would soon get a round of applause for their efforts.

But not before dessert, of course. And this was another West Cork production, a lovely presentation of Bushby’s Strawberries, with elderflower, gorse ( a posh name for the furze bush, according to Bryan), Milk Sorbet and Raw Yogurt. And, just to make it even better, it was paired with the Alasia Moscato d'Asti, a low alcohol frizzante, aromatic, refreshing and easy-drinking.

And that brought us to the end of an very enjoyable evening of spectacular food and drink. Here’s to the next one!

Diversity was the theme for last week’s Australia Day Wine Tasting in the Royal Hibernian Academy in Dublin, a theme that was well illustrated indeed with over 200 wines to be tasted.*


Everything from a high quality Tasmanian sparkling wine, Jansz Premium Cuvee NV, to a d’Arenberg Rare Tawny (had that lined up for my very last sip but, stupidly, forgot about it - next time!). And so much good stuff in between, including a special Focus Table for Shiraz and Chardonnay for which the country is justly famous. Diversity is rampant, according to Hugh Johnson. "And we can choose: the full-on or the nicely judged."


Wine Australia is happy that Ireland “maintains its love of Australian wines, with bottled imports up 26%. Higher price point segments are pushing the overall value up, helped by the advantages of the exchange rate.”


There was no shortage though of lower priced "nicely judged" wines at the show, some very well known ones like the Casella Yellowtail  (lovely Chardonnay), the less well-known Kelly's Patch selection (most of them easy drinking and easy on the pocket at €11.99, plus a couple especially developed for restaurant lists), Deakin Estate’s list includes an award winning Sauvignon Blanc (Victoria) along with an impressive Artisan’s Blend (Semillon and Sauvignon blanc).


At the top end of the price scale you had memorable marvels such as Parker Coonawarra Estate First Growth and the gorgeous Tyrrell’s Winemaker's Vat 1 Hunter Semillon 2010 (from the Tindall stand). Each is the Signature Wine of the respective vineyards, according to James Halliday in his Wine Atlas.

The Hunter Valley is well known for Semillon, a grape that I rather like and one that you rarely see on its own in Europe.  But this 2010 by Tyrrell’s is a gem, no oak, great fruit and terrific acidity.


No shortage of Riesling here and the first to impress was the super Hardy’s HRB 2014 with its great balance of fruit and acidity. Clare Valley produces some terrific Rieslings and we got a whiff of petrol as we sampled Jim Barry’s The Lodge Dry Hill 2014, an excellent wine. And that was matched, maybe even shaded, by Peter Lehmann Wigan Eden Valley 2006, superb flavours and aromas and more of the petrol, again his signature wine according to Halliday.


The Wirra Wirra Lost Watch, at the Tindal’s stand, was one of the driest of the Rieslings and it too had petrol in the aromas; great fruit too with some style, top quality and an all round excellent wine. All the Riesling though would need food methinks.


Table 3 (C&C Gleeson) had an offering from Tasmania and our second sip from the island was the Eddystone Point Gris 2013, a lovely almost creamy wine. On then to Cassidy Wines and our first taste of a Margaret River wine.


Chardonnay “is a headline act for Australia” but having moved away from the “bold full-bodied Chardonnays of the late 20th century, today’s wines are excitingly varied” and Australia now offers “more restrained and balanced examples of this versatile variety.” Don’t think there’s any great news here as this trend has been there with some time but no harm in having it confirmed with some style in Dublin.


The Vasse Felix Filius Chardonnay 2014 (24.99), inviting fruity and matching acidity, really well balanced, is one to note. Vasse Felix, by the way, was founded in 1967 and is the first winery to be built in the Margaret River.


And the Chardonnay just got better at Febvre who had a smashing De Bortoli Estate Growth 2013 from the Yarra Valley. So well made, rounded. Close your eyes and you could be sipping in Burgundy. Their 2013 Windy Peak (also from the Yarra) was lively and very drinkable.


Findlaters too had a terrific Chardonnay and the Katnook Estate Founder’s Block, from South Australia Limestone Coast, is also well priced. Really excellent and aren't I glad I bought a bottle of it in Bradley’s just a few days ahead of the tasting. Looking forward to that even more now!

And the good Chardonnays kept coming. The Wolf Blass Gold Label 2013 (Adelaide Hills) is just superb. And we finished on another high, impressed hugely by the 2011 Wirra Wirra 12th Man (also Adelaide Hills) and imported by Tindal.

Sauvignon blanc is one of the best known and best loved grapes on the planet. The Loire Valley is regarded as its heartland but it thrives too in New Zealand, especially in Marlborough, and in Chile and indeed in many other places around the world.

And it is to New Zealand that West Cork born Graham Norton went to try his hand at making a bottle. Personality in a bottle or a personality with a bottle? The answer is somewhere in between.  


Cono Sur Reserva Especial Sauvignon blanc 2013, Valle de Casablanca (Chile), 12.5%, €13.99 Bradley’s Offlicence

According to the recent Wines of South America, Cono Sur (the first winery to be recognised as carbon neutral) is “one of the most consistent and reliable wineries in the country”. The country is, of course, Chile, and this is an excellent example and Very Highly Recommended.

The pale gold colour is bright and healthy looking and there are fresh aromas of white fruit and blossoms. Fruit flavours in the crisp and elegant palate, lively acidity and a decent finish too. Ideal as an aperitif or with seafood dishes.

Norton is a shareholder in the Invivo Winery and the wines for blending were brought to him in London. Winemaker Rob Cameron came too and together they came up with a wine that quickly won a string of awards.

Critics say:
“Fresh and lively… fabulous juicy finish”.
“Tongue tingling….full of punch and personality”.
“Savvie….full of lime zest.”
Norton says: “It’s lovely! Tropical fruit...a bit of zing...cheers to that!”

Colour is just about present with hints of green. Aromas are fresh, white fruit, some herbal elements too. There is a generous flush of freshness and fruit, matched immediately by balancing acidity (just like a Norton put-down!). Must admit this is an excellent drop indeed (unlike his red chair!) and Highly Recommended.

Emiliana Sauvignon blanc 2014, DO Valle Central (Chile), 12.5%, €12.95 Bradley’s
This is an organic wine by Eco Balance, made for “relaxed everyday enjoyment. Integrity, sustainability and an earth friendly focus inspires all that we do”.

This is light yellow, green also evident, clear and bright. Aromas include herbal elements, white fruits too (including grapefruit). It is fresh and fruity with a zingy acidity, a decent mouthfeel and a moderate finish. Very good value and Recommended.


More good news for Cono Sur and chief wine-maker Adolfo Hurtado. Their Silencio Cabernet Sauvignon, launched in Dublin 12 months ago,  has been named as the best red wine in Chile, gaining an unprecedented 98 points.

New Zealand winemakers are calling 2013 the Vintage of a Generation and there was much evidence in support at the Craggy Range tasting in Adare Manor Hotel last week. Right across the range and not just with the outstanding wines from the Prestige Collection.

Okay, so this is a New Zealand winemaker and, yes, they have a Sauvignon blanc. It comes from the Te Muna vineyard in Martinborough. We started with this 2013 edition. Hannah Gordon, the company’s UK/Europe Business Manager, was our guide in Adare and she said it was not your typical NZ Sauvignon blanc: “It is slightly more classical, more elegant. It has had five months in oak, also some lees contact, so it has a nice richness, the acidity is calmed down. A great food wine, very versatile.”

The 2013 Chardonnay came from Kidnappers Vineyard in Hawkes Bay, the “warmest area in NZ but with a cooling sea breeze”. This too has had oak (nine months) but the influence is not overly much. There is a great concentration, an almost creamy feel and a long finish. Hannah said it is a great food wine, a Burgundy style. “The idea is to reflect the place and the name comes from the time when Captain Cook’s servants were kidnapped here.”
So now we were getting the picture, the “other side of the New Zealand story, learning from the Old World without copying”. And that was further underlined as the tasting progressed.


Back now to Te Muna Road which has a climate like Burgundy and is “the birthplace of quality Pinot Noir in New Zealand.” This 2012 Pinot Noir has “vibrant fruits..verging on creamy..a bit of classic earthiness to it, like the Old World”.


And then a step up again, this time to the 2013 Aroha, again a Pinot Noir from Te Muna Road but part of the Prestige Collection, a wine that could last 10 to 15 years. Hannah pointed to the dense fruit flavours. The texture and finish are all top class. Grapes from the two best blocks (16 & 19) were used for this gem. Aroha means love in the Maori language.

In 1876 the floods in New Zealand’s region of Hawke's Bay turned some rivers into land. You may read about it here.  

Gimblett Gravels was one such place and is “the most famous single vineyard on New Zealand”.  And from these gravels comes a surprising wine. “It was the biggest surprise for us,” said Hannah as she introduced us to two Syrah. And another surprise, the most awarded wine in New Zealand is not a Sauvignon blanc but Le Sol, one of this pair of Syrah.

The 2011 Syrah is excellent, medium bodied with fruit and spice and a long finish. But that 2013 Le Sol (French for soil) is simply amazing. No wonder Decanter named it as the best Syrah in the new world.

“Syrah is the new story of New Zealand,” said Hannah. “This is our highlight wine, fresh, fruity (with great density of aroma), acidity, fine tannins, and very accessible even at this young age. This could age for 15-20 years.”
We would finish with a couple of Bordeaux blends, one of which, Sophia, “put us on the world wine map”. First up was the 2011 Te Kahu from the Gimblett Gravels and the name means Morning Mist. Fruit for sure but this is more elegant than fruit driven, with a persistent finish. The blend is 70% Merlot with Cabernet Sauvignon, Cabernet Franc and a very little Petit Verdot.

The 2013 Sophia, with 62% Merlot, brought us even more convincing evidence of the excellence of that year with “its spiced fruit character. It is fresh, acidic, with a fine tannin structure dominant but not too heavy, a beautiful wine”.

Jancis Robinson loves this one, even if not its “heavy” bottle: “Really well accomplished. Long and neat. Really lovely wine that lasted well in an opened bottle - a good sign”.

Sophia, from the old Greek Sophia, means wisdom. We could all love (philo) this and become instant philosophers!

The love continued through the excellent lunch in the amazing Oak Room where we got a chance to sample some of the wines again and where we were introduced to Sophia 2004. Those that doubted, if there were any, joined the confirmed philosophers. Great wines in a lovely venue with excellent company - hard to beat on a Wednesday afternoon!

  • If you’d like to visit and stay at Adare Manor, you’d better hurry! Extensive refurbishment is planned for the leading five star hotel from early next year and it will be closed for up to 18 months.
  • Well done to Hannah and to Peter McCabe of Tindal’s for their input last week and to Anthony Tindal himself who left us in no doubt that he was a confirmed philosopher! Brian Lawlor, Food & Beverage Manager at Adare Manor, was on hand to make sure everything, including lunch, went well. It did!

Malta met Roscommon last week as part of the Roscommon Lamb Festival.  In Dingli village, Malta, amongst the gnarled olive trees and low-hanging carob branches, there is a family run farm set in an idyllic valley on the sun-kissed island, producing some of Mediterranean’s finest and most iconic food, including olive oil and wine. The family are the Mifsuds, their project is called Diar il-Bniet and their restaurant on the farm uses only the produce of the farm.

Gleeson's Town House, members of Good Food Ireland, are recommended in all the guides and rightly so. The Gleesons met the Mifsuds in Malta and invited them over. Gleeson’s are an integral part of the town and it is no surprise that they are fully behind the Join Our Boys , a charity founded here last year. The supper was a fundraiser and so instead of paying for a ticket, you made a donation. By Sunday morning, over a thousand euro had been raised.

The ultimate aim of Join Our Boys is to ensure a treatment or cure is found for this catastrophic disease in time to save the lives of Archie, George, Isaac and all the children in this generation diagnosed with Duchenne Muscular Dystrophy. To be told that one of your children has a fatal disease, that currently has no treatment or cure, is devastating. To be told your three children (including your twins) have a fatal disease that currently has no treatment or cure is beyond comprehension; it is beyond words.

Virtually everyone in the town was dressed in orange for the fund-raising on Friday and we got to take part in a parade through Roscommon and out to the castle before we came back to Gleeson's for the supper.

Here we met some of the visiting Maltese, including Dorianne, Darren, Can and chef David. Dorianne and Can took us through the “starter” buffet and we enjoyed samples of their farm food.

There was a delicious Baby Broad Bean Paste  which you took with a crispy biscuit (gallette). They had a peppered sheeps cheese and a plain one, both hard. Their own olives, marinated with Maltese garlic and parsley, were gorgeous and we also sampled the Goat Cheese Pie with Broad Beans. Perhaps my favourite was the Butter Beans with Garlic and Parsley. And there was no shortage of a superb Tomato Paste (known in Malta as Kunserva).

In between, there was entertainment and young Archie belted out a number on the drums and followed up with a some fast paced rap.

And no shortage of wine either with Willie Tindal on hand with a couple of excellent samples from the vast range of Tindal Wines, a Chenin Blanc/Viognier from South Africa and a Cabernet/Merlot from Australia.

We didn't have to travel too far for the beer as local craft brewers Richard and Michaela from the Black Donkey brewery were there with their two beers - they hope to have another two before the end of the year. I sampled both. First up was the Sheep Stealer (5.5% ABV) a Belgian-style saison, ideal with food. The other was their amber ale, their own style: “not a hop bomb, this one’s a malt bomb”.

Main course was Braised Spicy Lamb Shanks, Maltese style of course, with salad, big green beans, tasty roast potatoes (with seeds). Overall, this was delicious and cooked to perfection. And their desserts didn't disappoint either, especially the Maltese almond biscuits. There was a whole table full of desserts, chocolate very much in evidence! We also had the chance to taste some of their lovely breads.

The Mifsuds contributed hugely over the weekend and their food was sampled again on the Sunday at the aptly named Global Village in the park, just one of many events (including of course, sheepdog trials) staged as part of the Lamb Festival, now a well established annual get-together.


With all the international cuisine available - we had a Brazilian Barbecue on the Saturday night - we never got to taste Mary Gleeson’s famous lamb stew. Next time Mary!

Bryan McCarthy, Head Chef at Greene’s, is eagerly looking forward to the launch of the McCurtain Street restaurant’s Supper Club series next Thursday evening. And his menu (below) has me and and others anticipating the event where the wines will be supplied by Tindal’s.

Arthur Little, General Manager of Greene's and Hotel Isaac: “The concept behind Greene’s Supper Club is to introduce our members to some of the new trends in food today, be it foraging or using ocean vegetables; different cuts of meat or even going back to the ‘Ark of Food’ and introducing traditional favourites.   We will bring experts in a variety of food related areas to meet, discuss and enjoy what Greene’s has to offer”.

The guest of honour on Thursday will be the master winemaker Ed Adams from La BÃ¥scula wines in Rioja, an Englishman who is working closely with the winemaker. They have vineyards in both the north and south of Spain so you can expect a variety of exciting wines and indeed some exciting names such as Catalan Eagle, Heights of the Charge Rueda, Turret Fields Monastrell/ Syrah and No Stone Unturned with the beef. And the something sweet with the pud will be Casta Diva muscatel.
