Whitefield Old Smoke Smoked Porter 5.4%, 500ml bottle Bradleys


Whitefield (formerly White Gypsy) is a brewery in Templemore, County Tipperary. Cuilán Loughnane is the main person here and, according to Sláinte  (2014), his fingerprints “are all over the Irish brewing scene”. I knew that he (through White Gypsy) had helped Cork’s Elbow Lane and Waterford’s Metalman get up and running by contract brewing their beers and more. 


But Sláinte also details his earlier involvement, first with Dwan’s Brewery (Thurles) from 1997 and, from 2002,  he was head brewer at Dublin’s Messrs Maguire (the forerunners of J.W. Sweetman) before setting up on his own as White Gypsy in 2009, a move that saw him join the “Second Generation: Mid 2000s to 2011” of Irish craft brewers.


He has grown his own hops and also brewed beers specially for food, beers in wine sized 75cl bottles and aimed at the restaurant trade. He is still going strong under the new label. By the way, this porter is named after Templemore legend, Old Smoke Morrissey.


They say: Traditionally, beers made in the midlands would have had a slight smokiness due to the malt being dried from peat fires. This stout brings out that combination of smoke and roast while remaining light on the palate.


Black as a newly tarred road between Templemore and Nenagh. There’s a tanned head, soft, and soon sinking away to the black. Aromas are smoky, a hint of bacon as you sniff. And it’s much the same combination on the palate. But nothing too extreme, all rather svelte and subtle, terrific balance right to the very satisfactory finish indeed.


West Cork Baltimore Bitter 5.5%, 500ml bottle Upstairs at Quay Coop 



In December 2014, Dominic Casey, Henry Thornhill and brewer Kevin Waugh launched the West Cork Brewing Company. The 1st Brew-Hotel to set up in Ireland and also the country’s most southerly brewery.


It is based in Casey's of Baltimore Hotel and they started with three beers, Sherkin Lass a citrussy Pale Ale 4.4%, Roaring Ruby Dark Red Ale 4.4% and Stout X Stout West a chocolate porter 4.3%, the crew intent on their beers matching the quality of West Cork’s artisan foods. 

This Baltimore Bitter is one of their latest. Colour is a very dark red with a tan head, soft, and slow to disperse. Aromas are moderate, notes of pepper. On the palate, there’s quite an amalgam, fruit, honey and a tang of citrus, lime perhaps. Quite a lip-smacking finish.  

Refreshing and somewhat different, with a bitter aftertaste, and I can see it playing its part in the suggested pairings of Pulled Pork and Smoked Gouda. “We have used our own well water and the most traditional methods.” It is unfiltered and vegan friendly.




Clonakilty Smuggler Irish Porter 6.0%, 500ml bottle O’Donovan’s 



Dark stuff this with a bubbly frothy tan head that sinks slowly. Moderate aromas of roast and chocolate as the head sinks another notch, just a thin disc now. And, now on the palate, it is sweet chocolate, coffee too and a medium touch of bitterness at the finish.


They say: We are passionate about making beer with no compromise, brewing small batches with big personality. Using locally sourced grains, the best hops and water from our own well, our beers are handcrafted with care…. 


Pour slowly for a smooth creamy head. Enjoy at 10-12 degrees. It goes well with dark meats, rich desserts and chocolate, and is delicious and satisfying on its own.


The Deasy family brewed beer in Clonakilty (known as the brewery town) for almost 200 years, including the famous Clonakilty Wrastler. The Deasys also had a legendary reputation as successful smugglers along the dramatic and rugged coast of West Cork.



Journeyman IPA 5.2%, 500ml bottle, X-mas gift



Hazy amber is the colour here and the white foamy head lingers a while. Expecting more middle of the road from the final bottle of my five pack (all different styles) but certainly more of a punch here. Big whack of hops on the palate - they say, and I agree, “bursting with fruity hop flavour”. And, as was the case in the previous four, the balance is good, thanks to the malt. 


No details on the hops or malt used, at least none that I can find. Not too many details at all. And certainly nothing about food pairings. All I can tell you is that it went down pretty well with the middle chapters of the John Banville piece of crime fiction playfully titled April in Spain, though hardly a playful mystery, at all, at all, as Banville’s Chief Superintendent Hackett might add.


But there is something of a mystery on the label, and indeed on all the Journeyman labels in the pack. It tells us you of need of a great barrel to make a great beer, that Journeyman is steeped in the tradition of the highly skilled craft of coopering. Are these Journeyman beers are matured in wood rather than stainless steel?


Cooperage can be confusing. I walked past one earlier, in a building once owned by a distillery. It now houses the Aquaculture & Fisheries Development Centre, a research facility of UCC and embedded within the School of Biological, Earth & Environmental Sciences (BEES).

West Cork Stout X Stout West 5.5%, 500ml bottle Bradleys


From Ireland’s most southerly brewery comes this Stout x StoutWest Milk Stout. Black as the Baltimore night with a slowly sinking tan head on top. Mild aromas of chocolate and coffee and a hint of cinnamon. And these continue to the palate, the milk chocolate still moderate, pleasantly so, with a sweet touch of honey and lemon. 


Not one of those beers that blows you away. None the worse for that. This is more on the traditional side, sails rather than horse power, steady as she goes, she’ll get you home, relax and chat as your boat comes in. A decent finish.

They say: Located in picturesque Baltimore on the shores of the Atlantic, West Cork Brewing Company, hand-brews each brew “using our own well-water and the most traditional methods. We hope it does for you what it has done for us - bring friends together.”

Geek Bits

Grain – Pale ale malt, flaked barley, flaked oats, roasted barley, chocolate and carafa III.

Hops – East Kent Goldings.

Water: Brewed using our own spring water.

More: All beers are unfiltered, unpasteurised and vegan friendly as only whirlfloc (carrageenan moss) is used to aid in clarification.



Killarney Golden Spear Blonde 4.8%, 500ml bottle Bradleys


This blonde is a honey blonde from Killarney, with a foamy white top that slides down slowly enough. Lots of bubbles spouting up through the clear beer.


Refreshing from first contact, with its malt character “from several specialty malts and a touch of wheat” showing well. There’s a modest floral aroma and enough hops on the palate to balance this easy-drinking beer. Easy-drinking from me means no rush, take it easy and enjoy. As you’d expect with an IBU of 30, the finish is quite dry, lipsmackingly so!


The brewery relates the legend that gave rise to the name:  Fionn Mac Cumhaill, Ireland’s heroic warrior and hunter, often hunted on the shores of the lakes of Killarney and throughout the McGillycuddy Reeks. One day while climbing Torc mountain, he was attacked by a magical, ferocious boar. With a single blow, Fionn killed the lunging boar in mid-air with his fabled golden spear. Savour a pint of our delicious Golden Spear while toasting our legendary warrior!


No food pairings on the Killarney website but, last summer, I enjoyed this with Free Range Rosscarbery Pork Belly (Thai spices, roasted turnips, peanut rayu, and fresh apple salsa), at the Garden Restaurant in Liss Ard (West Cork).


Killarney update

"Construction is well under way at our new brewery, distillery and visitor centre on the picturesque Ring of Kerry, with views of the MacGillycuddy Reeks and lakes of Killarney. This state-of-the-art facility will meet growing demand for our beers and with a custom built malt and grain distillery, it will be home to our luxury spirits portfolio. The €24 million investment, a stunning one-of-a-kind 62,000 sqft complex, will be Ireland’s largest independently owned facility. It will provide a cultural home to the thriving business, local employment and meet the growing demand for premium Irish products and experiences."



Journeyman Juicy IPA 5.9%, 500ml bottle, X-Mas present



Journeyman’s Juicy IPA has a murky orange colour with a white head that hangs about a while. It is hoppy for sure, no shortage of fruit flavours, thanks in large measure to generous dry hopping. This is another well made beer in the Cooper’s Special Batch series brewed for SuperValu and Centra.


It is produced by the Pearse Lyons Brewery at the Stationworks Brewery in Dundalk, a new brewery opened in late 2018 on the site of the former MacArdle Brewery (closed 2001, after 140 years). Stationworks was the name of a Newry brewery that Lyons (via parent company Alltech Beverage) bought a few years earlier and that name was reused in the Dundalk brewery where the award-winning own-brand Foxes Rock range (also available in SuperValu) is also produced.

Whiplash The Mash & The Fury Double Decoction Märzen 5.8%, 440ml can Whiplash Online


This is a lager, though you would not say so if you were going solely by the colour which is a darkish red topped by a tan head already fading to a thin disc. This lager is “at the dark end of the spectrum”. Aromas are complex, rum and raisin, caramel too.


And that caramel and raisin are prominent on the palate in this amazing beer with its unreal depth of flavour. No doubt it is hard to classify this one, but is fermented with their influential lager yeast and “lagered until it’s ready.” It is ready, according to Whiplash (who should know!), so give it a lash and enjoy it from first whiff to that slightly sweet finish.

They say: Our lager series continues with The Mash & The Fury, a hyper traditional Double Decoction Märzen…..For the uninitiated, decoction is the age old process of boiling a portion of the mash to better utilise undermodified grain. As malting technology has improved, this has become an anachronism and most modern brewhouses are now built without the means to decoct mashes. Only the few who still believe that the distinct caramelisations that decoction produces cannot be imitated still employ this sorcery. We are one of those breweries.

The Big Smoke returns! This exceptional imperial stout has been brewed in collaboration with The Dubliner Liberties Distillery, in whose bourbon barrels we aged a smoked porter for over half a year. The results are sublime and intense: a rich, smoky 12% stout with subtle hints of chocolate and vanilla, underlined by a gently warming bourbon taste. The complex malt bill includes beech-smoked and oak-smoked barley for a rounded fragrant smoky flavour as well as chocolate malt and chocolate wheat for hints of dark, bitter cocoa. Magnum hops provide a clean bitterness and hint of spice.

On the craft journey with a mixed session, with this superb Red Ale the final can of the four. 



Yellow Belly “Red Noir” Dark Red Ale 4.5%, 440ml can Bradleys


They say it’s a dark red and it is, very dark, more black than red with a slim milky-coffee coloured head (shortlived). Aromas, caramel and toasted malt, are pleasant, if modest. You get much the same but more intense on the palate, caramel, chocolate prominent here. It is very smooth, very flavourful, very dark. Just wondering have Yellow Belly come up with a new style here, the dark Irish red ale?


They say: How a Red Ale is supposed to taste. Mild aromatics of sweet toasted malt and light smoke entices the drinker to this dark decadent red ale. What follows is a velvety smooth beer with a complimentary combination of chocolate and dark forest fruit flavours on the tongue. 

Style: Dark Red Ale


The Wexford brewery didn’t quite realise that it had a big hit in this one in its earliest incarnation, regarding it as a seasonal if not a one off. But popular demand has its way and, since early this year, they responded to demand and now Red Noir is part of their core range. I can understand why and very happy that the Belly took notice! Tending more toward the simple than the complex yet simply superb!

Mescan “Seven Virtues” Lager 4.9%, 330ml bottle O’Briens Wine


It’s got the nice golden lager colour and billions of bubbles rising up to the soft white head. A bit of citrus and grass (not that grass!) in the aromas. On the palate, it is a bit more than your usual lager - it is after all dry-hopped. But it is crisp and refreshing, easy-drinking. Well worth a try!


They say: Virtues lager is the first in a series of one-off brews. Crisp and slightly dry hopped, a nod in the direction of both tradition and innovation.  Serving Temp 2 - 4 °C. Note that serving temperature, somewhat lower than usual.


Mescan always pay attention to matching their beers with food and last year even invented the Mescan Food-Pairing Wheel, designed to take the angst out of matching beer and food. It’s an easy way to pair each Mescan craft beer with the foods that complement it. It’s available on the website and is easily printable from a pdf format. It’s a useful resource for all the home chefs who are exploring new options in their kitchens during the pandemic.


The Mescan Food-Pairing Wheel was developed by Inge Roels, a Belgian expert in food-pairing who has worked with the brewery since its early days. She has produced a guide for nine Mescan beers so far – Mescan Blond, Westporter Stout, Mescan White, Mescan Red Tripel, Mescan Extra, Mescan Saison, Mescan Special Reserve, Seven Virtues Lager and Seven Virtues Lambik.


“Mescan craft beers are exceptionally suited to enjoying with food”, said Cillian Ó Móráin of Mescan Brewery, “We were inundated with queries as to the best pairings from consumers and from restaurants and bars. We wanted to create something simple yet effective that would help people enjoy our beers with the optimum foods – hence the Mescan Food-Pairing Wheel was born”.

Rascals with Hopfully “Siamese Dream” Pale Ale 4.5%, 440ml can Bradleys



This Pale Ale collaboration between Rascals and Hopfully brings you a bagful of Far Eastern flavours, specifically coconut, pink guava and lime zest (all listed as ingredients).


There’s a hazy yellow colour. Aromas are rather modest. But it certainly delivers on the palate reaching, as promised, every corner with aromatic sweet pink guava, lime zest and coconut. A delicious easy-drinking ale, nicely-timed for the summer!



They say: The beer is brewed with Sabro and Sorachi Ace hops. The latter is a Japanese hop known for its lemon, coconut and even bubblegum properties. Meanwhile, Sabro hops offer fruity and herbal flavours and aromas, with noticeable coconut, sweet citrus and tropical fruit characteristics. Overall you’ll get a nice coconut hit up front, followed by a gorgeous tropical sweetness from the guava, and then in the finish there’s a spirited citrus payoff from the lime zest. Oat malt and Vermont yeast ensure a smooth mouthfeel and enticing hazy appearance.


For the geeks

Yeast: Vermont

Other: Lime Zest, Coconut, Pink Guava Puree

ABV: 4.5%



Otterbank Brewing “Mates Rates” Tart Session IPA 4.9%, 440ml can Bradleys 



Poured this a little too vigorously and got myself quite a head, a head that was slow enough to sink. Actually a fingerful of that head gave me the clue that citrus would be a factor. Light gold is the colour and there’s no shortage of carbonation activity. And citrus is a key feature on the palate; refreshment’s another. A sour for sure but a well balanced one. Sour is not my favourite style but the balance here keeps me onside.


Otterbank are described as a brewing and blending outfit and the brewer is none other than Declan Nixon of Yellow Belly, themselves known for their sours. Otterbank is a bit on the side. By the way, this was brewed at Third Barrel by and for Otterbank who are based in Muff, Donegal.


The label also informs us that the malts are Pils, Cara, Clair, Wheat, and Oats while the hops are Pacifica and Citra (used in the dry-hopping).


By the way, Session is also used on the label. I’d have thought that the abv would have to be at 4.5 or under to earn that tag. What do you folks think?

Heaney New England IPA 5.7%, 440ml can Bradleys


The label intro to this beer is short, and accurate: Haze, hops, and juice.


Light gold, deeply hazy, and a fluffy white head that’s in no big hurry to depart, mark the appearance of this new IPA from the Heaney brewery.


Aromas are somewhat reticent but you may note ripe Apricot plus notes of the more exotic Pineapple and Grapefruit. And more fruit on the palate, Mango and Charantais Melon to the fore, with just a touch of bitterness in the background. Lovely soft mouthfeel and perfectly balanced. Another well-made beer from the Derry brewery, one for the short-list for sure.


Mal Mackay from Heaney’s tells me the second batch is even better: “Yes, it is our first NEIPA and we’re very proud of it, although we thought it was great there is always room for improvement and the second batch we canned this Wednesday (April 7th) is even better. 


It’s slightly more refined on the body, a little smoother with the carbonation dialled in exactly right. I’m not sure what you get on your tasting notes but I feel there is a lot of squidgy apricot in there and some juicy red apple, it’s all about the jooooose. Very little bitterness if any, and a nice smooth lush body. We used Mosaic and Amarillo in equal quantities in the dry hop and Chinook in the whirlpool, no hops in the boil at all. Bottom line is yes, we thought it was good, but as ever here at Heaney, the next one will be better - until it’s perfect.” 


Food pairing suggested by the makers: Jamaican Jerk Chicken with a stone fruit sauce.


O’Hara’s Session IPA, 3.8%, 500ml bottle via Radical Drinks



A light golden body, a hazy one, with a white head that hangs about a bit. Hoppy citrus in the aromas. Clean and crisp as it hits the palate, almost lager like until the hops quickly dispel that notion and it continues full of flavour to the bitter end.


They say: This session IPA was designed to be light and easy drinking while still full of the punchy flavours of a traditional IPA. Brewed with 100% Irish malt to deliver a pale, clean and very crisp body. This matched with the late addition of hops, including Cascade, Simcoe and Chinook, make this a full flavoured, incredibly drinkable IPA.

That’s a pretty good summation of one of the better session beers you’re likely to come across.

For the geek:

Malts: Caramalt and Oat Malt

Hops: Cascade, Simcoe and Chinook followed up with the double dry hopping from Citra and Amarillo.

IBU: 25

Fermentation: Top fermentation

Serving Temperature: 6-8°C

Food Pairing: Pairs perfectly with chicken Caesar salad, smoked salmon, crisp lamb and Stilton cheese.

Glass: O’Hara’s Irish Craft Beer conical glass

Availability: 30L Keg, 50CL Bottles (carbonated)


Wicklow Brewery Coola Boola Session IPA 3.8%, 330 can Bradleys



Colour of this Coola Boola, a session IPA, from the Wicklow Brewery is a very pale yellow. The head shrinks quite rapidly. Aromas are somewhat reticent but, with Amarillo and Citra in the hop list, expect a little citrus. And you get that too, with a hint of lime, on the palate. With some tropical stuff in there too, it is quite a mouthful, good balanced inter-play of fruit and bitterness, more than enough to keep hop-lovers happy. Put this on your session list!




Rascals Wunderbar IPA, 6%, 330 can via Bradleys


Mid-gold is the colour of this German-style beer (bet you knew the style!). Fluffy head starts big, diminishes quickly. Touch of orange on the nose. And on the punchy palate too where the malt comes on-stage also to balance it all up. Actually, you realise (rather than realize) that this IPA is, thanks to sourcing and the interplay of hops and malt, is very much a European drink and a very welcome version indeed.  Man doesn’t live just on exotic fruit and floral. After all, variety is the spice of life. So well done to the folks at Rascals.


As they say themselves: A true IPA that stands up to its American competitors….DAS IST GUT! HOPPY  | FRUITY | PUNCHY. Unfiltered. Unpasteurised
