THE WHISKY TERROIR PROJECT

READ ACADEMIC PAPER

The first rigorous, academic paper in our ongoing Whisky Terroir Project – "The impact of terroir on the Flavour of Single Malt Whisky New Make Spirit" – has officially been published in the peer-review journal Foods.
 

The game-changing research using the very latest Gas Chromatography Mass Spectrum Olfactometry (GC/MS-O), demonstrates analytically and sensorially that terroir influences the flavours in both barley and the spirit distilled from that barley.

Though we of course knew it all along, this paper proves once and for all – beyond denial and intuition – the influence of terroir on single malt whisky new make spirit.

Bertha’s Revenge Navy Strength Gin

Ballyvolane House Spirits Company are delighted to introduce you to a new nautical member of our little herd Bertha’s Revenge Navy Strength Gin.  We have raised the ABV to a lip-pursing 57.1%, and have shuffled the botanical blend slightly to accentuate one or two of the more pronounced flavour notes.  The extra strength gives our merry crew of spices a megaphone through which to convey their message, which is as smooth and as well-balanced as you would expect from a cow riding at anchor.

Bertha’s Navy Strength gin tastes divine when sipped over ice.  She is also an excellent base to gin-forward cocktails, especially a Gimlet.

What is Navy Strength?  Britain historically boasted the largest and most powerful navy in the world and during the Napoleonic wars, more than a quarter of the Royal Navy’s 17,000 men were Irish including including one of Justin’s ancestors, Vice-Admiral Sylverius Moriarty who was born in 1735 at Ballyferriter on the Dingle Peninsula in Co. Kerry.  He was also one of the only Irish-speaking Vice-Admirals in the Royal Navy. More here.

This is a new and unique competition where beers are judged by peers!
2021 Gold goes to
Porterhouse Brew Co.
for their Round the Clock Imperial Stout, followed by Silver to
Lineman
for Astral Grains Stout and Bronze to
Kinnegar Brewing
for their Thumper Double IPA.

The Breakfast of Champions 6.1% oatmeal stout is yours to buy! It’s an oatmeal stout like no other. We’ve made it with specialty coffee roasted by our Dublin 8 neighbours Imbibe. The base recipe of our new stout has a generous helping of chocolate wheat and café malt; we’ve also used plenty of oats and some lactose too. We’ve even added a few cacao nibs just because we know how well they’ll complement the beer. Combine all the ingredients and you’ve got the breakfast stout of champions!

Champagne would have been flowing freely during this period, establishing itself as a luxury celebration wine. Piper-Heidsieck's history dates back to 1785 and now own 70 hectares of sustainably managed vineyards. Their signature cuvée Brut is round and vibrant with a richness from the high proportion of black grape varieties. With notes of almond and hazelnut to accompany lively bubbles and fresh flavours of pear and crunchy red apple, the beautifully balanced finish is delicate and long with a hint of citrus fruits.

Due to COVID-19 government restrictions, their operations have changed significantly. The Irish Blue Cross is already extremely stretched due to the global pandemic and they are working around the clock to treat the tens of thousands of patients already on their files.

The Irish Blue Cross is an animal welfare charity with a practical and caring approach at the heart of their clinical work. The veterinary team provide information, support and education on how to be a responsible pet owner and ensure precious pets have a happy and healthy life.

Supervalu's Current Wine Offers Focus on Organic and Vegan, also on Alcohol Free


Supervalu's first wine offer of the year focuses on a selection of
 Vegan wines plus a range of Low Alcohol wines for January. It is up and running and due to end on January 20th after which another tempting offer will kick in. Just remember that, just like O'Briens below, Loyalty points will not be earned on the purchase of alcohol products.


The WINE OF THE MONTH is GIGONDAS REMY FERBRAS 75cl at only €12, was €19.66. This excellent wine from the Lower Rhone grows on a rocky argillaceous limestone terroir, to allow the best expression of Grenache, Syrah and Mourvèdre. The classic vinification preserves the authenticity and elegance of this wine. To be served with roast lamb, game and casseroles, also perfect with mature cheese.


Rioja, with two from Finca Labarca and one by plus the La Maldita Garnacha, is well worth a try. I have my eye on the Abellio Albarino (now at €10.00 instead of 13.76). Made entirely from hand-harvested Albarino grapes, this Spanish wine, from the Rias Baixas area, has a mid-gold colour. Quite rich aromas of white fruit, apple and pear, and also peach. There is a striking refreshing minerality on the palate where the same fruit flavours shine through fresh and crisp.


The Albarino grape is a distinctive Northern Spanish variety. Its refreshing characteristics make it very versatile with fish and particularly with seafood. Often recommended for Asian also.


On the dry for January? Then help is at hand from two well-known producers. Torres feature with Naturo Muscat and Syrah while Freixenet have a Cava on offer, all non alcoholic.
