An impressive Austrian sparkling wine and an interesting semi-sparkling red from Piedmont.



Loimer Brut Rosé Niederösterreich - Reserve Sekt NV, 12%

Sekt is the term for sparkling wine in Germany and Austria. This Brut Rosé Reserve blends Zweigelt, Pinot Noir and St. Laurent and spends at least 24 months on the lees. It is made with 20% reserve wines and 80% from the 2018 vintage. Bottled June 2019. Disgorged 2021. Dosage 2g/l. Traditional bottle fermentation, shaken by hand.


Good strong pink colour here with an amazing display of bubbles rising. Foam doesn’t last very long. Yeasty notes in the aromatics. The palate is mouth-filling, strawberry among the gentle fruit flavours, a pleasing mouthfeel with a lively acidity at play before a dry finish. 


The winemakers say this “comes very close to a champagne”. For me, it is better than many champagnes. Well worth a try. Very Highly Recommended.


The Loimer winery is based in the Kamptal region of Austria and it is biodynamic and Fred is a fan of cows: “Cow manure is the best you can find for composting.”  He mentioned this on a Zoom masterclass last year, following similar endorsements by Aurelio Montez (Chile) and Giovanni Manetti (Chianti Classico).



“… Use resources you find in your place, not to buy everything, but to find on the farm what you need to produce. For instance, we make our own compost and we buy very little. Second, you cannot separate plants and animals, nature works in a holistic way, together they have composted over the years to create the soil we have today.”


“Herbicide is a disaster. There is life in our soil. Always something going on, even in a small square, something like 60,000 lives in there, all doing something. We cover our soils, green cover, blooming cover. Our own compost is getting better and we spread it in the autumn and we also make compost tea out of it for spraying. Stinging nettles (they’re everywhere) and other herbs are also used for spraying teas.”


“Cow horns, many people don’t believe. You can’t really measure the impact of these preparations but you can see the difference. There is for sure an impact and cow manure is the best you can find for composting.”


Biodiversity is another essential plank. “Monoculture is a big problem today. It is necessary to create as much biodiversity as possible. Not one hundred per cent vineyard but always bushes, trees and grassland over the whole area.”


Latest from Austria. 2022 vintage seen as promising


The president of the Austrian Winegrowers’ Association Johannes Schmuckenschlager sees the 2022 vintage as promising, albeit with a somewhat lower harvest volume, in a season that has been challenging in terms of both climate and costs. “Austria’s winegrowers are already busily preparing for this year’s wine harvest. In places where grapes typically ripen earlier, such as the Seewinkel in Burgenland, harvesting has already begun. Due to the weather conditions, the harvest has begun slightly earlier than last year. In the best-case scenario, we can expect wine volumes to match the average of previous years at around 2.4 million hectolitres,” said Schmuckenschlager at a press conference in Vienna Friday (02.09.22)

Contero Brachetto D’Acqui (DOCG) 2021, 5% ABV

Brachetto is a red wine Italian grape grown predominantly in the country’s Piedmont region.


This really delightful frizzante pours a deep pink from the screw-capped bottle and there’s a brief life for the bubbly pink head. Aromas are both floral (roses) and fruity (pomegranate, strawberry). There is a slight sweetness on the light and lively palate before a drier finish. A very pleasant low ABV wine and Highly Recommended.


Distributors Liberty tell us Contero is now owned by the Marenco family, who are Moscato and Brachetto specialists.  “The 11 hectare Contero estate remains one of the best producers of invigoratingly delicious Moscato d’Asti and Brachetto d’Acqui. The vineyards are situated on steep hills, on tufaceous-marl soils, in a perfect amphitheatre in the commune of Strevi (the heart of one of the best zones for Moscato in Piemonte).


The vines are superbly tended and produce fruit of stunning quality. The Moscato is lifted, fresh and frothing, while the Brachetto has a lovely rose petal character that emerges from the aromatic, grape-scented fruit.” 


The grapes were hand picked into wooden boxes and carefully selected. After gentle pressing, the must fermented on the skins for two to three days at low temperatures, in stainless steel tanks. The must was then separated from the skins, with fermentation halted at 5.5% volume alcohol by filtration to leave around 100g of sugar per litre. Bottling took place under pressure for a light sparkle. 


Brachetto d’Acqui is best enjoyed when served at a temperature of between 8 and 12°C. Excessive cooling should be avoided, because at cold temperatures, the wine’s aromas are not released, and their scent does not reach the palate.


Thanks to its moderate alcohol content, Brachetto d’Acqui is an excellent accompaniment for desserts and fruit, regaling even less sophisticated palates with delicious sensations. Sublime with fresh strawberries or ripe peaches in season: the aroma and scent of the fruit mingle with those of the wine, producing a heady and intensely pleasant floral bouquet.(From http://www.brachettodacqui.com/en/brachetto-e-cibo/ )

Brachetto d’Acqui has made a name for itself as an ingredient in mixed drinks, cocktails and aperitifs, proving an excellent accompaniment not only to sweets, but savouries, too. Try it with cold cuts and cheese.

Colour of this Chenin Blanc (from near the Loire city of Saumur) is a mid gold. It is fresh and floral, intensely so, with flavours of grapefruit, apricot and pear and a superb acidity, with a mineral touch. Quite a classic Chenin Blanc, fresh and fruity, it has a long dry finish with citrus notes. Highly Recommended.


Liberty, the importers, tell us that Caroline Meurée & Hervé Malinge are a young winemaking couple who met while studying in Bordeaux. “Despite neither of them being from the Loire Valley, in 2019 they bought Domaine des Sables Verts in the heart of Saumur Champigny and embarked on their first vintage.” 


Just one hectare from their 15 is planted with Chenin Blanc (the rest with Cabernet Franc). Their Chenin grapes for this wine come from three separate parcels. The final blend is assembled and bottled in January. Characterised by layers of fresh citrus notes and ripe apricot, the wine is beautifully textured with a backbone of lively acidity. 


The potential of their forty-year-old vines persuaded Caroline and Hervé to produce a single-vineyard wine. Vinified and aged in new four hectolitre French oak barrels, the wine is kept on fine lees for 12 months to add both richness and texture.


Food and wine pairings from Caroline suggest: “…from land to sea! From a veal blanquette to a grilled sea bass, via an asparagus risotto…”


Hervé has the serving tips: serve at 10-12°C, don’t hesitate to decant it!


Caroline and  Hervé are vignerons at Varrains which is about 30 minutes west of Chinon ( an excellent base for visiting the vineyards and chateau of the Loire Valley). On your way to Varrains, visit the amazing  Fontevraud-l’Abbaye on the way. 


Quite a lot of Chenin Blanc is grown in Northern France (from Vouvray to Saumur) but South Africa (in Stellenbosch and Paarl) grows more than any other country with the French second and the USA third.

Spice Route Chenin Blanc Swartland (South Africa) 2020, 14.0%,

This South African Chenin Blanc has a light gold colour. Aromas are mostly fruit, peach and tropical. On the palate, it is quite complex, quite concentrated, the fruit flavours well balanced by a very lively acidity.  Highly Recommended.


Quite an outstanding balance actually and deliberately induced. The Chenin Blanc for this wine was picked at different maturity levels. The first picking was done slightly earlier to retain freshness and acidity, the second lot was picked in mid-February, with some slightly raisined grapes in the bunches bringing more richness to the blend. The lots were vinified separately. 


Don’t want to get to technical here but worth continuing I think as we can learn how the techniques employed shaped the final product. Upon arrival at the winery, the grapes were gently destemmed and pressed. After 48 hours settling, the portion that was picked earlier was fermented in stainless-steel tanks to preserve freshness and elegance before then being matured in matured in clay pots known as Qvevries (also amphora) for eight weeks. The late-picked portion was fermented and matured in old French oak barrels for 10 months, before the two components were blended and bottled.


The Swartland is 65kms north of Cape Town. The climate is hot and dry. Viticulture here it is not straightforward, according to Fairview and Spice Route owner Charles Back. “You have to be very careful to select good moisture retaining soil in the first place, soil that can trap the moisture and slowly release it later when needed.”


Winemaker Charl du Plessis told us about another “surprise” development here, their importation of 20 qvevris from Georgia. A qvevri is huge earthenware amphora (800 to 1200 lts) sunk into the ground and used for wine fermentation and storage. The hand-made terracotta pots have been fired and coated inside with beeswax. He did a vintage in Georgia in 2018.

Chenin Blanc is South Africa's most widely planted grape - and the resulting wine is in demand around the world. Last year, South Africa exported 53 million litres of white wine, mainly to Germany, the United Kingdom, and America.  

With Chenin Blanc, Fresh wines are mostly made in stainless steel tanks which accentuates fruit flavours and acidity. And then you have the more complex Fruity Styles along with Rich Styles (more dominant presence of oak).

This leads to such a diversity of wines that shoppers can be confused especially when purchasing bottles from supermarket shelves. 

The local Chenin Blanc Association in association with Stellenbosch's South African Grape and Wine Research Institute have come up with a style indicator (similar to wine wheels) to help. More on this Business Insider story here.

You've heard of flying winemakers. You're more
likely to find Pedro Parra in the ground.

In 1947, a few growers founded this cooperative in Parnac. Their goal was to revive Malbec, the grape of Cahors. They succeeded.


I’m always interested in a wine that has had input from Pedro Parra, the renowned expert on soil and vineyard mapping. Always interested also when I come across a wine from Cahors. And here I have both, together!


In the summer of 2010, I was meandering lazily, like the River Lot, through the vineyards of Cahors and the ancient Cathar fiefdom of Luzech before getting down to buying some wine in the little village of Parnac. Here the Cave Cooperative du Vignoble de Cahors (you saw Les Cotes d’Olt on the signs) have a massive cave with a fine shop.


Founded in 1947, it has also been credited with the revival of winemaking in the area which had fallen on hard times. The  Cahors vineyard and its Auxerrois (Malbec) was fading having had survived for at least 600 years.



Led by the Syndicate, then "headed by Abel Baudel, and by the new actor that is the cooperative cellar, Cahors wine received its first quality label, the VDQS in 1951. …On April 15, 1971 the classification decree (AOC) appeared. Cahors enters the elite of French wine.”


And while Malbec is now very much associated with Argentina, Cahors remains one of its best vineyards. Indeed, the ongoing revival, even this bottle, has been boosted by an Argentine touch. 


Causse du Théron is a project started by Antonio Morescalchi of Altos Las Hormigas in Argentina and his friend Pedro Parra, the renowned expert on vineyard mapping in South America. 


Following their first visit to Cahors in 2013, they became fascinated by the origins of Malbec and the region’s diverse soils, especially the vines planted on Kimmeridgian limestone. They selected two vineyards owned by a local family as the wellspring of their Cahors Malbec project. The name, Causse du Théron, translates to ‘hills of Theron’, causse meaning hill in the local dialect.


Wines from Cahors were, over the centuries, known as “Black Wine” but this one is light, an alluring and bright mid ruby. Cherries and herbal notes head the aromas. Tart berries and cherries backbone the fruit-driven wine on the palate where a fresh acidity is an outstanding actor. Concentration is high - the vines are forty years old. Silky tannins underline its refreshing quality and the slightly spicy finish is lengthy. Elegance over power. Very Highly Recommended - just as well after the build-up! 😉


Fermentation took place in temperature-controlled, stainless-steel tanks using ambient yeasts. The wine spent between 15-21 days on its skins with gentle pump overs to aid extraction. The wine then aged for 18 months in cement tanks to allow it to mellow into what is the top Malbec I’ve enjoyed in a long while.


Food pairings: Malbec is a beaut with leaner red meats (try steak and mushrooms or buffalo burgers and mushrooms). Beef Brisket, Lamb and BBQ Pork Ribs also come up trumps.

Trinity Hill Gimblett Gravels Syrah 2018 Hawkes Bay New Zealand 12.5%

In 1993, Trinity Hill was one of the first to plant grapes on the Gimblett Gravels in Hawkes Bay in 1993. The Gimblett Gravels, located on the former bed of the Ngaruroro River, is now a highly sought-after sub-region renowned for the quality of its wines, particularly those made from Syrah.


Colour here is quite a dark crimson, lighter around the rim. Jammy fruits and pepper in the aromas. That fruit is prominent on the palate, with subtle oak in the background. This Syrah lives up to its French name with an elegant restraint. Tannins are ripe and the natural acidity is another plus factor. Finish is smooth and long. Great purity and freshness here and Very Highly Recommended.


The wine was aged for 14 months in a mixture of new and older French oak 228 litre barriques and 5,000 litre oak ovals. This barrel ageing regime, more typically used in the making of Pinot Noir, includes lees stirring and very minimal racking. It was bottled in early 2019.


They say: Our premium wines made from hand-picked fruit exclusively sourced from estate vineyards in the Gimblett Gravels grape growing region. These wines are elegant yet powerful and reflect the very best expression of the vineyard and winemaking team. They are made with food in mind (great with red meat dishes but especially good with game, particularly with duck and venison) and lend themselves to mid to long term cellaring.

Chateau De Santenay ROC Blanc Mercurey (AC) 2017, 13%

Chateau De Santenay is situated in the central strip of the Côte Chalonnaise which itself is in the middle of the Burgundy vineyard (north to south and leaving aside the isolated Chablis). Here, on that central strip, according to the World Atlas of Wine, “Mercurey is much the best-known appellation…”. 


Our 2017 Santenay comes in a bright and clear light-gold colour. Aromas are concentrated, pear and citrus notes, and just a mild hint of vanilla. The mouthfeel is superb, the texture impressing (thanks to its time in oak). For sure it is ample in the mouth, those superb fruity aromas (more of the pear now) continuing and citrus flavours, plus hazelnut hints. Thanks to its stimulating acidity, it has a beautiful balanced path to the finalé.


The Chateau de Santenay is one of the most important Burgundy estates with its 90 hectares spread across 14 appellations planted in Pinot Noir and Chardonnay. “We are totally committed to the protection of the environment and the biodiversity of our vineyards.”


The Chateau itself confirms that the grape variety is 100% Chardonnay from a small vineyard in the village of Saone-et-Loire. White wine represents only 10% of the vineyard in Mercurey but it is a very significant proportion. Mercurey blanc has a zesty mineral edginess (from the limestone in the soil). The soils are rich in clay, but the limestone (typical of the Côte Chalonnaise) is “very present” as well as some areas of marl. These characteristics give the white wines of Mercurey a strong structure. 


“Our good farming practices allow us to be certified ‘High Environmental Value’ and ‘Terra Vitis’. The soil is managed by tillage, permanent grass cover and that ,with herbicides removed from the process, provide a biologically active soil life. The thinning and green harvesting help to control the yield and maintain good health of the plant by aerating clusters. Winemaking is traditional with moderate pneumatic pressing. Static settlings for 12 hours then fermented in oak barrels. Aged sur lies during 12 to 18 months.”


Pair with pasta, rich fish (salmons tuna) shellfish, mild and soft cheese, charcuterie.





Flichman Dedicado Malbec (Tupungato Mendoza Argentina) 2016, 13.5%

This Malbec from Argentina’s Mendoza (the UCO Valley sub-region) has a deep ruby colour. Ripe red fruits feature in the intense aromas along with hints of spice (from its 12 months in oak). On the complex palate, there is dark fruit and a very fresh structure with concentrated ripe tannins. The finish is long with more fruit and spices. Very Highly Recommended.

You can taste why this is one of Finca Flichman’s signature wines. The finca was founded in 1873 by a Polish immigrant and bought by Sogrape in 1998. It is also very well known for its Caballero de la Cepo, an iconic bottling and one of the earliest super-premium wines.

Importers Liberty: Produced in the Valle de Uco, Mendoza. Made by one of Argentina's rising stars German Barra, fruit for this Malbec is sourced from the Tupungato district of the Uco Valley. Aged for 12 months in French oak, it is full bodied and rich. 100%Malbec.

High altitude Tupungato is the northernmost sub-region of the Uco Valley in Mendoza, at 1300 metres above sea level. The grapes benefit from large diurnal temperature variations which result in a longer growing season. Pedro Parra, the renowned Chilean soil mapping expert, consults on these vineyards.


Flichman tell us that fermentation was carried out over 20-25 days in stainless steel tanks. After malolactic fermentation took place, the wine was aged in French oak barrels for 12 months. It is a wine with typical aromas of the variety subtly fused in wood. It presents an excellent level of nuances on the palate.

The two best known sparkling wines are Champagne and Prosecco and they are, of course, included below. But so too are less well-known options such as Cava, Crémant, and Pet Nat.



Pet Nat-Bubbles without the hefty price tag

Pet Nat? Well, Pet Nat is an abbreviation for pétillant naturel, the French term that roughly means naturally sparkling.

Is it then a copy of champagne? Not so. It is the other way around if anything, as Pét-Nat has been around longer. Pét-Nat is bottled while still undergoing its first round of fermentation. The French call this process “methode ancestral” and you may see that on some labels.


You may see “bottle fermented,” or the Italian “col fondo,” (more or less a  pét-nat Prosecco). The crown cap and a little bit of harmless sediment are other clues!


The method, with variations, is pretty widespread across the wine world. Most are fun and good with food, especially lighter dishes. Simple, authentic and quite diverse, Pét-Nat puts the bubbles on your dinner table or even picnic spread. It sparkles without the hefty price tag.


Entre Vinyes Oníric Pét-Nat 2020, 11.5%


Catalonia’s Parc Natural Del Foix is the source of this pétillant from Mary Pawle wines..

Oníric in Catalan translates as dreamer and Entre Vinyes is a personal project of Maria Barrena (Azul y Garanza in Navarra), the aim being to rescue old forgotten vineyards and restore a balanced ecosystem. This 60-year vineyard, surrounded by a rich biodiversity, is in the Baix Penedes region (in Catalonia) close to the Med. The grapes for the pét-nat are Xarel-lo (mostly) and Muscat.


Colour is a cloudy yellow/lemon. On pouring, you create a large white “head” but it won’t hang about. This is easy drinking, approachable and refreshing, with good depth and length. And of course, it has that pleasant sparkly tingle. White fruit flavours and just enough acidity to balance make it harmonious all the way to the lip-smacking finish. A wine for sun and fun. Highly Recommended.



Champagne and Champagne Charlie


Charles Heidsieck Blanc de Blancs NV Champagne (AOC)



Pale gold is the colour of this Blanc de Blancs by Charles Heidsieck, imported by Liberty Wines. Unceasing fountains of pin-head bubbles race towards the top of the glass. Amazing concentration straight away, yet is is elegant on the palate, lovely balance and weight, engaging with a lively acidity also with mineral notes and a creamy mouthfeel. It is one hundred per cent Chardonnay and has notes of lemon, apple and pear plus orchard blossom and the typical Champagne toastiness. Very Highly Recommended.


Charles Heidsieck, one of the most admired Champagne houses, was founded in 1851, by the man who would become known as ‘Champagne Charlie’. Their size, and commitment to excellence, has been underpinned by a winemaking team that between them have been named 'Sparkling Winemaker of the Year' at the International Wine Challenge on over a dozen occasions.




Champagne Fleury B d N Brut Champagne NV, 12%, Mary Pawle Wines


This Blanc de Noirs is made from 100% Pinot Noir and is indeed a white wine from dark-skinned grapes. The Fleury family have been here in Champagne since 1895. They raise their vines, biodynamically since 1989, on the Côtes des Bar in the southern extreme of Champagne. Indeed, they are pioneers of organic in the area.


Back to the wine itself and bubbles proliferate here, racing to the top in non stop streams. It has a deep yellow colour, intense flavours and aromas, including the typical ‘biscuity” notes. The wine has terrific depth from initial sip to the lingering finalé. Dry and delicious. Unusually intense, impeccably crafted, this is Very Highly Recommended and well worth seeking out!



Beaumont des Crayères Vintage 2013 Fleur Blanche Blanc de Blancs Brut at O’Briens Wine.  

Intense, biscuity is the strong first impression as the liquid meets the palate. Intense and exciting from the engaging first sip, with fountains of micro-bubbles powering upwards, with biscuity aromas and flavours and floral notes too, this is one of the better ones for sure. It is made from 100% Chardonnay and obviously 2013 was a very good year. Very Highly Recommended


O’Briens, the importers, are also enthusiastic: This is one of the most exciting, elegant Champagnes that we have ever tasted. Made from Chardonnay grapes, the pinhead bubbles have an acrobatic exuberance in the glass. A perfect apéritif wine but the richness on the palate would also lend it well to food.”



English Sparkling and the other French bubbles


English sparkling wines are quite popular these days and some of the best are being made by Limerickman Dermot Sugrue (above). You will find them under Sugrue South Downs and Wiston Estate in the Le Caveau portfolio here.

Crémant is the term used to classify French sparkling wines produced, using the Méthode Traditionelle, outside the boundaries of the Champagne region. The method, also known (within Champagne) as méthode champenoise, involves disgorgement and a second fermentation in the bottle and you can read more here


Exquisite Collection Cremant du Jura (AOP) Chardonnay, Aldi

Left it late? Pop into Aldi and get this excellent Brut (dry). 


I was very impressed with it. A sparkling Chardonnay, made using close to the same methods they use in making champagne, was perfect for my unexpected little celebration. It is not lacking in complexity, has light fruit flavours, a hint of biscuit (that you find in champagnes), and a fine finish. Good price too..


There are quite a few Crémants in France and many are excellent. Other Crémants come from Alsace, Burgundy, Limoux, Loire, Savoie, Bordeaux, Die (Rhone), and Limoux.


Saint Hilaire Blanquette de Limoux (AOP)  brut (Languedoc-Roussillon, France), 12.5% 



Did you now that champagne is not the oldest sparkling wine produced in France? That honour is claimed by Blanquette de Limoux which is also produced by the Methode Traditionnelle where it is naturally fermented in the bottle. It was first created by the Benedictine monks of the Abbey of Saint Hilaire over 450 years ago. Written records survive from 1531. The abbey is 25 miles south of Carcassonne.

CAVA

There’s some terrific Cava, the Spanish sparkling wine, out there also, so why not give the Iberian bubbles a try. Cava is a distinctive under-rated sparkling wine, made using the same method as Champagne.



Entre Vinyes Funàmbul Brut Nature Reserva 2017,  11.5%,

Fresh and dry, this elegant Cava is one for your shortlist; elegant yes, but full of energy and flavour (apricot and apple) and with amazing balance, all with a mineral note lingering on to the end. The mousse is creamy and smooth. This is pleasure to drink and Very Highly Recommended. Three grape varieties,  Xarel·lo, Macabeu and Parellada varieties, are in the blend. The wine has been aged for 24 months..

With an average age of 60 years, these vineyards are in the natural environment of Foix, surrounded by oak and pine forest, under a dry climate and on a porous soil (which swallows the water) and limestone, very poor and shallow, with hardly any organic matter. The great biodiversity present creates a unique ecosystem that naturally regulates the balance of the vineyard. Here, working in an artisanal way, they produce some terrific wines including this Cava.


 



If you haven’t tried Cava before why not head over to your local Supervalu and get a bottle of their Gran Troya. With its citrus flavours and a delightful finish, the pale gold Gran Troya is a terrific celebratory drink at an affordable price. Great for just sharing with himself or herself. If you haven’t tried Cava before, this is a good introduction. The grapes used are the traditional Macabeo, Xarel-lo and Parellada. Try with olives, grilled almonds. Serve at 6-8 degrees.



Prosecco (and Franciacorta)


Prosecco in Colour!


Bubbles are usually associated with the all kinds of celebration  and the the fun is enhanced when the bottles come in colour as they do if they are by Bottega. Recently, I was lucky to have a couple of delicious bottles of Prosecco on hand, each by Bottega. The Gold Prosecco Brut impressed for sure but it was the Bottega Rose Gold that really caught my attention. It is a terrific Spumante Brut rose, made from Pinot Noir grapes grown throughout the Veneto.


The hand painted bottles are not only eye-catching but "reflect the quality and care put into producing this wine”. Bottega do not use chemical-based products for their "metallised" bottles; this means the solvent for the varnish is water-based, instead of being oil or alcohol-based like more traditional varnishes.


Aldi Exquisite Collection Valdobbiadene Prosecco Superiore (DOCG) NV,


From the heart of the Prosecco area, from the steep hillsides of Valdobbiadene in the Veneto, comes this DOCG Prosecco. It is exquisitely light and refreshing with pleasing bubbles, attractive autumn fruit flavours and  floral touches. Have to say quite an amazing Prosecco for an amazing price.


I had popped into the local Aldi in search of a Crémant de Jura but that was out of stock. I happened to spot this, including the DOCG, and took a gamble.


There is another Italian sparkling wine, Franciacorta, and it is well worth searching out. Again, the Le Caveau site can help you, here

The 1701 Franciacorta Brut DOCG is a blend of Chardonnay (85%) and Pinot Noir (15%).  The summer heat of the vineyard is tempered by the breeze from the lake (Iseo, about 30 minutes west of Lake Garda) and the mountains to the north. “We choose to keep it on the lees for 30 months, well above the appellation minimum. It is made in the traditional manner, manually harvested, with the indigenous yeasts, and a secondary fermentation in the bottle but with zero dosage.


It is a gorgeous sparkling wine, the palate full and generous, clean, fresh and elegant, apple notes, citrus too and that typical brioche note, beautifully balanced and a dry finish.
