A nice glass or jug of Mead Sangria is fabulous on a sunny day, barbecue optional. Recreate the full festival experience at home. Here's the foolproof Celtic Mead Sangria Recipe:
2 parts Hazy Summer Mead
1/2 part Cointreau or Triple Sec orange liqueur
1 1/2 parts cranberry juice
Dash of fresh lime juice
Shake over ice with fresh lime juice and garnish with an orange slice.
For a lower alcohol version, try replacing Cointreau with orange bitters.

This is the first organically certified vintage for La Montesa. Grapes are sourced from the eponymous vineyard on the foothills of Monte Yerga in Rioja Oriental. It shows the positive effects of altitude to offset a hot vintage and to add some punch to Garnacha. Scented nose evoking Mediterranean scrubland. The Glass Curtain has made an impressive debut on MacCurtain Street, the latest food outlet in the bustling area of Cork city, with something for every palate and wallet. And the buzz goes on - lots more to come. Much of it in the old Thompsons Building, once a key bakery for the city. 

Brian Murray’s Glass Curtain is one of the smaller developments in the cavern of a building. There is much more space being filled between the street back as far as Wellington Road. Another restaurant, a bar and a micro-brewery are coming soon as the Lynch family (who own the Cotton Ball brewery) continue the exciting development.

But back to Brian and the Glass Curtain. He is very much  supporting local and indeed the craft beers on offer are from the Cotton Ball. They also have about a dozen tempting cocktails including one that I enjoyed on my recent visit. The “Low Fashioned” is a very tasty combination of Kinsale “Wild Red” Mead, Angostura, Demerara and Orange. 

Other local drinks featuring in the cocktail list include Longueville Apple Brandy, Blacks Gin and Kalak Peated Vodka. And one cocktail that you may well fancy, some of you for nostalgic reasons, is the Turkish Delight (Lychee liqueur, rose, orange blossom and soda). Those of you who remember Thompsons in its prime probably know that Hadji Bey Turkish Delight was made across the road. Quite an extensive wine list also and spirits too. So that’s the drinks. What of the food?

Those of you on social media will have seen the Glass Curtain publish their first food pic (above) in mid January. In the comments, chef/owner Brian said “the menu has been a living restless thing since we opened last month. Changing daily, still defining our style and still a lot of work to be done. Here’s one our guests and ourselves have taken a real liking to: the tandoori monkfish, chargrilled, with roast cauliflower, mussels, saffron and baby leeks.” 

As it happened we were in the evening the photo was taken and one of our mains was that very dish and we gave it a big thumbs up. Don’t think there’s too much work to be done on this one, aside from seasonal variations of course!

My mains that evening was based on a collar of pork. You don’t see this very often on local menus. More’s the pity as it’s absolutely delicious. And the Glass Curtain version was even more so. Pork collars are a familiar item in Europe and because of their intense marbling are used to make traditional sausages such as coppa. 

The collar is cut from the shoulder portion that runs from the neck to the tip of the loin. Bord Bia have a recipe on their site here and say that the cut is very good value and that leftovers can be used in pulled pork sandwiches.

Brian, who cooks with “a lot of love and a little fire”, declares on their website that “flavour is our holy grail” and he certainly got that spot on with this dish, the umami of sauce an outstanding factor. The menu description is: Pork collar, miso, grilled winter cabbage and peanut rayu. Tender and delicious. Go for it!

Starters here are called Small Plates. CL enjoyed her Confit Hake, house XO sauce, and grilled broccoli, while my Cured red gurnard in roast onion dashi also went down well. That dashi was probably the star and I asked for a spoon to make sure I didn’t leave one delicious drop behind.

Just three desserts on offer and, while our shared Honey Custard Tart (with nutmeg and fresh cream) was not quite on a par with the earlier courses, it was nonetheless polished off. Perhaps you may prefer the cheese offering: a selection of Irish cheese, Peter’s Yard crackers and honey.

The place itself is comfortable, seats about 35, and the service is excellent. Some seats will give you a good view of the open kitchen. We were absorbed when they started cooking their Beef Chop. This “monster” is about three  inches thick, I guess, and is for sharing. It is 35-day aged and they grill it on the bone. You may need one of the side dishes here, perhaps the  Smoked Heritage Potatoes with Beef Dripping!

I very much enjoyed visiting the 17th annual O'Donovan's Wine and Craft Beer Festival in the Clayton Hotel, Cork City, last Friday night; great to meet old friends and taste some new wines. And it wasn’t just wine. There was mead, from Kinsale of course, craft beers from home and abroad, whiskeys and gins galore including some from new and new-ish producers such as Clonakilty and Beara and more.

The O’Donovan’s staff were busying helping people make the most of it and one of their tasks was to man the tables featuring Gold Star winners from this year’s Irish Wine Show. Some 45 wines were awarded in all and are exclusive to NOffLA (National Off-Licence Association) member outlets nationwide.

Liberty Wines, with Gerry Gunnigan doing the honours, had two of the winners at their table and, after a conversation, mainly about Mayo, with Gerry, we started with those two. First up was the Italian Alpha Zeta “C” Chardonnay 2018 from the Veneto. Superb tropical fruits and as fresh as could be and it won Gold in the Under €15.00 Old World White Category.

And Gerry’s other Gold winner was the Kim Crawford Pinot Gris 2017 from New Zealand’s Marlborough, which came first in the Under €20.00 New World White Category. Very elegant, tropical fruits again, well balanced and well worth looking out for as the festival season nears. Two fine whites then but perhaps the top white on the Liberty table was the Loimer Lois Grüner Veltliner, an excellent example of the Austrian grape. All their own fruit and organic to boot.

Speaking of Christmas, one to look out for is the Delicato Gnarly Head Viognier from California. “Not over the top in aromatics” but lots of character and a great aperitif. The normal retail price is €18.00 but there’ll be reductions soon! Dave Buckley of Cassidy's also had a couple of well-priced South African whites. The Millstream Chenin Blanc struck a nice balance of fruit and acidity while the Franschhoek Cellars Unoaked Chardonnay had all the typical Chardonnay flavour and a good acidity. Doesn't miss the oak at all.

We then came across an outstanding Verdejo, by Spain’s Protos, at Comans Wines. A fresh and balanced wine from the Rueda with a dry lingering finish. Priced at €15.00, though, like most of the wines, it was reduced for orders during the festival.

The Vineyard were showing a pretty impressive white from the Loire, the dry and refreshing Chateau de la Roulerie Petit Chenin 2018.  Nearby, Damien from Tindal had a couple of excellent Pinot Grigio from the Veneto and he was very enthusiastic about both. You could see though that special care had been taken in producing the Zenato 2018, refreshing, soft yet with good character, a really good wine indeed. The San Giorgio 2018 was well balanced, clean and crisp.

In between, we had a chance to chat with Denis and Kate from Kinsale Mead and to taste their Atlantic Dry (white) mead and their Wild Red Mead and to hear of some plans in train and for the future including barrel-ageing and using Irish Honey. Looking forward to seeing the results but it could be a while yet for us punters as the enterprising couple keep their fingers crossed!

No problem finding Malbec when we started on the reds. Mackenway’s Callia “Alta” from San Juan in Argentina, was very juicy, very drinkable, and made an immediate impression with its “fruit bomb” of flavours. The Kaiken Terroir Series Vistaflores 2017, from Mendoza, on show at the Liberty Table, was a somewhat more serious drink, full bodied and silky, the Malbec enhanced by some Petit Verdot and Bonarda.

A couple of superb Crianzas followed. Some of you may be familiar with the El Coto Rioja Crianza, a harmonious mix of red berry flavours, juicy tannins and a well judged touch of oak that help make this the biggest selling Crianza in Spain. This was on the Mackenway table with an RRP of €17.00, with a reduction off that available on the night, as was the case for most if not all of the wines in the show.

Back to Damien then at the Tindal table and he was singing the praises, quite rightly too, of the Luis Cañas Rioja Crianza 2016, saying the extra calcium in the vineyard’s soil makes a difference to the thickness of the skins, so more colour, more concentration and you could taste that in this dark fruit flavoured wine, hints of the oak too and a long and very satisfying finish. Normal price is €23.50 and again the offer on the night brought it down to 19.97 per bottle.

Gold Medal

We finished the wines at the Cassidy Table with Dave taking us through two from California. First up was the Delicato Gnarly Head Zinfandel from old vines between 35-80 years and weighing in at 14.5% abv. Intense and bold the notes declared and yes indeed it is a big wine, loads of fruit. And lots of fans too for this style.

For me though, the next one, the Delicato Gnarly Head Authentic Black, was more to my liking. It is bold enough, full bodied enough “to rock your palate” but the Zinfandel has been toned down through the addition of Petite Syrah, Cabernet and Merlot. Should be superb with food as Dave indicated.

And there was some food around, including Carrigaline Cheese with the dedicated Padraig in attendance having overseen the Irish Cheese Awards the previous evening. Didn’t get much of a chance to try the food and we were heading to Dockland in any case. 

But we did have a beer with Conor O’Brien of NorEast Drinks. The Whitstable Bay Organic Ale, a delightful light coloured ale that is brewed using the brewery’s own chalk-filtered mineral water, is a soft blend of hops and malt. Liked that and must watch out for it next time I visit O’Donovan’s.

They’re coming from many corners of the world, from California, Chile, Argentina, from South Africa, from New Zealand and Australia, all coming to Cork on Thursday November 7th. People will be there too from the Old World, all heading to the O’Briens Wine Festival at the Clayton Hotel in Lapps Quay, Cork. And watch out too for Kate and Denis from the local Kinsale Mead Company - they’ll certainly have something for those on your Christmas present list (including yourself!).

Wine Masterclasses are an additional feature this year. There will be three of them on the night, including one by Jose Maria Fraile of Tandem. This winery in Spain’s Navarra is one of my favourites. 

I see also that the Lingenfelder brothers, the double act of Georg and Karl, will be in attendance. Not too sure whether both will be doing the masterclass or just one but one way or the other you’ll have a laugh along with some very interesting wines to taste. 

The third masterclass will be given by Maison Schröder & Schÿler (they’ll have three reps at the festival) and they have some terrific Bordeaux wines under their wing, including Châteaux Kirwan (classified Grand Cru Classé in 1855); should be interesting!

The Delicato Vineyards are one of the leading family producers in the US and produce under a variety of labels including Gnarly Head that you will see in Ireland. They’ll have Jonas Hillergen in attendance.

What’s going on in Chile these days? Check it out with Javier Letamendi from Viña Leyda (DO Leyda Valley). You won’t have to trek over the Andes to check out the wine scene in Argentina as Bodegas Norton from Mendoza will also be in Cork.

We recently highly recommended the Ken Forrester Old Vine Reserve Chenin Blanc Stellenbosch (South Africa) 2018, relatively new to O’Briens, and this excellent South African producer will have Louw Strydom on hand to tell you all about it and their other wines.

Looking forward to meeting Charlie O’Brien of Kangarilla Road in Australia’s McLaren. Hope he’s got some of the Devil’s Whiskers with him! New Zealand wines are always welcome here as are the country’s producers. Sacred Hill’s man at the Clayton will be Ben Stuart.

There’ll be bubbles of course, perhaps to begin the evening. Check the champagne by Champagne Beaumont des Crayères. Gilles Francois will have it at the perfect temperature.

And would you like to finish with a drop of Port? Ah, go on! The person to see is Lorna Rouse of Taylor's & Fonseca.

It may have been wet and windy outside the City Hall last Friday evening but inside there was a sunny positivity around the stalls. Beara Gin are exporting to the continent; Joe’s Farm’s new Potato Crisps are going very well; Longueville House ciders have had an excellent year; Kinsale Mead and Stonewell Cider also speak well of their 2018 experiences.

Beara Gin are relative newcomers, just over 12 months in existence. But they are making their mark in the competitive Irish market and Brand Manager Peter White told me they are already exporting to Germany, Poland and Denmark. A pallet has just been dispatched to France and they are now working on Italy. 
Rupert, Longueville

Apple Wine
Getting into a new export market takes patience and time so best of luck to Peter and all at Beara Gin whose gins are infused with salt water and sugar kelp. They have two gins on the market, the original Ocean Gin and their Pink Ocean Gin (here the addition of Cranberry and Rosewater adds the pink hue).

Rupert Atkinson, the smiling face of Longueville Beverages, reported an excellent year, particularly the last six months. “The hot weather sent cider sales flying and the fact that it is available in O’Brien’s was also a big factor.” Longueville normally have lots of apples for sale but not this time as stocks of cider and apple brandy have to be replenished.

Stonewell are another top local cider-maker and they are known for their innovation, both summer and winter. Their winter offering this year made its debut in the City Hall. It is a Nohoval Irish Apple Oak Wine, the finest Irish apples raised in traditional French casks. Superlative is mentioned on the label. I couldn’t argue with that!

And speaking of innovation, Denis and Kate of Kinsale Mead were right alongside. Kate showed me their gorgeous gift pack of three miniatures, a wee bottle each of Hazy Summer Mead, Wild Red Mead and Atlantic Dry Mead. Not just a package; it is delightfully illustrated with the story of mead. Worth a look. By the way, if you want some of that Hazy Summer, you’ll need to act fast. “That went very well for us,” Kate said and stocks are fast running down.
Crisps

Sandra Burns of Killeagh, whose Joe’s Farm vegetable crisps have become a favourite over the past couple of years, was delighted with the reception the new Potato Crips have received over the past year and said they flew out the door during the Ploughing Championships. Husband Joe is a big fan of the new crisps (a mix of colours), all made at the family farm in Ballycurraginny. Both the vegetable and potato crips are widely available, including SuperValu.

Recently, they had a pumpkin picking day on the farm and were inundated when they put out a call for pickers, individuals and schools among the volunteers. Sandra was delighted with the schools as it turned the day into an easy going food education event. See more about it here on their Facebook page.

Jim Edwards is a renowned restaurant in the renowned foodie town of Kinsale and it has been serving up classic fare since 1971.

And while some of those beloved classics are still on the menu, Jim Edwards is not slow to support new producers and new products in the area. Just a peep at their drinks list confirms this, with Kinsale Mead, Stonewell Cider and beers from Black’s of Kinsale and 9 White Deer (Ballyvourney) on offer. 

Local gins include Kinsale gin, Blackwater gin and Black's gin. while local whiskeys include Pogues from West Cork and the world famous Midleton Very Rare. With the best of spirits available, there is no shortage of cocktails. Produce suppliers, some long-standing, are listed on the back of the menu.
Mussels

And there is no shortage of food choices here. You may dine in the Gastro Pub or in the restaurant. The Gastro Pub menu (including a sandwich selection) and A La Carte menu are available from 12pm to 10pm daily. In addition they have daily specials and a value menu also available all day. No wonder the venue has been declared  “a standard bearer in Kinsale's distinguished culinary culture” by  the McKenna Guide.

We were glad to see the A La Carte menu available from lunchtime on when we arrived there about one o’clock on a recent Friday. Soon we were seated by the window and reading our way through the choices. By the way, from exchanges at a nearby table, we heard that you can pick and choose from the various menus.
Monkfish classic

The mussels and oysters come from nearby Haven Shellfish and I picked the rather traditional starter (they don’t really do cutting edge here in any case) of Kinsale Mussels toasted with Garlic Breadcrumbs. Very tasty, with a well prepared salad. And CL too was very pleased with another excellent appetiser, this of Pan Seared Scallops in garlic and basil with a cauliflower purée.

We sipped our Black’s ale as we waited for the mains. Unbeknownst to ourselves we had chosen two house classics and looking back we can appreciate how they’ve stood the test of taste and time. Both were superb.
Lamb

One is the flavoursome Mint and Herb Crusted Rack of Slaney Valley Lamb with a rosemary and garlic jus. Beautifully cooked, neatly presented, as were all our dishes. 

Our other mains was the Medallions of Monkfish, pan fried with ginger, spring onion chill and lime dressing. Another superb combination, no shortage of quality here. And no skimping on quantity either.

And, just in case you haven’t enough, in another nod to tradition, they serve three sides as well: potatoes gratin, seasonal vegetables and fries.

It was a fairly busy lunch service in the restaurant and no problem to the staff as they kept the food coming and helped the customers make their choices, patience needed in some cases!

We did have a look at the dessert menu but, having been well fed, decided to give the sweet stuff a skip and finished off with an excellent cup of Maher’s coffee, another local business supported by Jim Edwards. Roll on the 50th celebrations in 2021!

Over 100 of “Ireland’s best makers, designers and artisan food producers” were on show at the Cork City Hall Craft Fair over the weekend. I took an opportunity to call in there on Friday and, surprise, surprise, I spent most of my time at the food section where I met some old friends and some new.

The gorgeous packaging of the Lismore Food Company was certainly an eye-catcher but the biscuits inside proved they had substance as well as style. They come in both savoury and sweet, an Irish Digestive with Wild Atlantic Sea Salt and Caraway with Irish Seaweed among the savoury, Hazelnut, Cinnamon and Raisin along with an all Butter Irish Shortbread among the latter.

All in colourful round boxes, ideal as gifts. But do watch out for the larger blue rectangular box. Inside you'll find “divine crisp apple thins wrapped in the finest dark Belgian chocolate...an epicurean delight”. We tasted those Dark Chocolate and Apple Crisp Thins and they became an immediate favourite. You could take these anywhere! Think I’ll keep mine at home though.

They’re widely available and you can purchase at their online shop as well.

There was a warm welcome from Julie of Highbank Orchards at the Kilkenny corner. She had her full range of organic drinks here, both non alcoholic (syrup, treacle) and alcoholic (gins, vodka, cider and a delicious Highbank Organic Sack). 

Our favourite on the day was perhaps the Organic Apple Cider Vinegar with the Mother*. Bought a bottle so we’ll be giving that a longer test! Julie suggested serving it with warm water at breakfast or as a wonderful addition to a salad dressing. Meant to get back here to have a chat with Helen of Mooncoin Beetroot but slipped up. Next time!
Preserves by Wild Irish Foragers & Preservers

More drinks then and a very pleasant surprise at the Wicklow Way Wines stand. They produce Móinéir Wines from Irish fruit. Móinéir is the Irish word for meadows. 

Their flagship Strawberry Wine is created from hand-picked Irish strawberries, with around one hundred and fifty small strawberries in each bottle. We had a wee taste of this alluring wine. You expect the slight sweetness of the fruit but not the dry finalé.  The Blackberry wine (some elderberry in there too) had a deeper flavour, another excellent drop from nature’s bounty. Both have an ABV of 11.00%.

Kate and Denis Dempsey are really working hard at getting the mead message across and they too were in the City Hall, showing their Wild Red and Atlantic Dry White meads. Find out more about this ancient drink, now being given a new lease of life in Kinsale, here 

You may drink it like wine (abv of 12%) or use it in a cocktail. Here is a recipe for their Wild Red Sour from their Facebook page: This tasty tipple consists of our Wild Red Mead, Blacks Brewery Gin, Orange Blossom Honey Syrup, Lemon, Egg White, Cherry Bitters and is garnished with shavings of Skelligs Chocolates Irish Sea Salt Dark Chocolate and an orange twist.

And next we were on to a product based on an ancient seed called Camelina Sativa, better known in English as Wild Flax. Newgrange Gold from County Meath grow it. When grown it is cold pressed and bottled in the Boyne Valley. We did buy a bottle of this Camelina Oil. It is, we’re told, very high in Omega 3 “and has a much desired 2:1 balance of Omega 3 to Omega 6. Low in saturated fat and high in essential fatty acids, Camelina is a very healthy oil.” Try a teaspoon a day! Can also be used for stir frying, baking, salads. 

At this point, we had gathered a nice selection of food and drink and the bags were getting a little heavy so time to head off and begin to enjoy. The biscuits will probably the first to go!

Long, Lazy Sunday at Ballymaloe

There were gasp when Ballymaloe House gardener Mags Coughlan told us she grows 4,500 leeks here each year. Soon we would see some of them on our plates as we enjoyed lunch in the house. The garden tour, a mead tasting, a long leisurely lunch and a visit to the ever increasing craft fair in the Grainstore and Big Shed, were all part of a lovely day that brought the curtain down on the Munster Wine and Dine activities for 2017. A good day. A good year.

Hazel Allen introduced the fifty or so of us to Mags who told us the aim here in the walled garden and surrounding area is to grow “seasonal and unusual”. Even with Mags working flat out, there is no way the garden could fully supply the house, so Ballymaloe gets much of its regular plant and vegetables supplies from local growers, a traditional relationship maintained.


That leaves the gardener, in consultation with the chefs of course, to concentrate on something different, a crop of sea-kale for example, followed in turn by asparagus and artichoke. And then there are also edible flowers and flowers for decoration. One of the specialities of the walled garden, taking advantage of a south-facing wall, are peaches. Lots of herbs here too, of course.

All is grown from seed so that means glasshouses and we walked through there admiring the lines of harvested pumpkins (also on the day’s menu). We were then shown the relatively new cider apple orchard; varieties here include Dabinett and Bramley. Here too we saw the hazel bushes which provide quite a harvest and have a bit of growing to do yet!

All had been quite in the fields where the pigs are kept until the arrival of our group. Then little groups of the younger pigs came rushing out to greet the visitors. They may not have been so eager had they known that the same people would be eating their older siblings later on.

Back then to the conservatory room in the house for an aperitif, thanks to Kate Dempsey of the Kinsale Mead Co. We sampled her Atlantic Dry Mead and also Wild Red Mead  – and then she made some delicious cocktails using her mead (and also the new Beara Gin). Quite a few were very impressed by the mead. Both meads are honey based and are rapidly becoming widely available in Supervalu’s and speciality shops such as URRU in Bandon and Bradley’s in the city's North Main Street.

Time now for lunch, the main event. A good start is half the battle. And so it was here with a delicious warming bowl of Garden Pumpkin Soup with Chilli and Parsley Oil. More simple food followed, simply delicious Ballycotton Crab Paté with cucumber and dill salad.

We had a choice for the main course. CL chose the Poached Ballycotton Monkfish with Chive Butter Sauce served with Leeks and Romanesco while mine was the Roast Ballymaloe Farm Pork with red cabbage and Bramley Apple Sauce. Each, with Pommes Duchesse and Glazed Carrots on the side, was superb.

The temptation levels then soared with the arrival of the famous Ballymaloe Dessert trolley. We were like the little piggies! Pavlova, poached pears, chocolate cake (and sauce), and so much more, all washed down with little sips of sweet Jurançon. Pratsch Gruner Veltliner and Solstice Rhone Valley were the earlier wines.

After the tea or coffee, or a garden infusion, there was a quick review of 2017, a raffle for foodie prizes and an announcement that Munster Wine and Dine had decided to donate €300.00 to Penny Dinners.

Some of us then took a walk around the annual craft fair. The opening day, Saturday, had been busy but one stall holder told me Sunday, the day of our visit, was even busier and she was looking to getting her feet up for the night! There were some gorgeous crafts here but, looking for a particular item with certain restrictions as to material, size and colour, proved mission impossible for me! The search begins again next week at the big Craft Fair in the City Hall and the smaller one at Franciscan Well Brew Pub.
Sweet stuff



Darkness had now settled on this amazing East Cork farm and our bus had arrived. A very satisfied group headed back to the city, bang on schedule.
