Taoiseach Micheál Martin will make an address to Cork’s business community at their upcoming President’s Dinner At Home and Cork Business of the Year Awards, which takes place virtually this year on April 17th.

An exceptional evening of celebration, awards, great food, light entertainment and networking, and panel discussions with business and civic leaders, has been planned for the evening.

The dinner is always a stunning showcase of Cork produce, and this year will be no different.   Attendees will enjoy a Taste of the City at Home culinary experience, which is a collaboration between Cork’s top hotel chefs and well-known Nash19 owner and past CBA President, Claire Nash.  Claire, who has been a leading organiser in Cork’s famous Long Table Dinner over the past few years, says “the quality of the food will be on a par with the Long Table and will showcase our favourite local producers and the extraordinary talent of local chefs who are pushing the boundaries with their food.

The Cork Business of the Year Awards will also be presented on the evening.  The finalists were announced last week and 7000 public votes have already been received.  Voting is open on CBAAwards.ie for the remainder of the month.

Commenting on the annual President’s Dinner and Awards, President of the Cork Business Association Eoin O Sullivan said, “The event will not only recognise businesses and individuals who have made an outstanding contribution over the past year, and those who have shown true resilience in one of the most difficult of trading years, but it will also be a stunning showcase of Cork produce and the amazing culinary talents of local chefs. They have put their creativity and their hearts into the dishes to make the menu truly unique.

This is a sharing dinner for two and is the perfect way to say thank-you to your team who have put down an extraordinary year, as behind every good employee is a great partner or friend.  We hope the night will give everyone a much-needed lift. We are also very grateful to An Taoiseach for taking time out of his incredibly busy schedule to make an address, and to our sponsors JCD, Centra, Peninsula and the Irish Examiner for their incredible support.”

The dine-at-home experience for two, which will be available for collection from The Imperial Hotel on the day of the event, includes six courses of daring and delicate dishes from six different chefs that will not only showcase their individual creativity but will also use the best local produce that can be found in and around Cork. 

The mouth-watering menu includes a carpaccio of Waterfall farm beetroot, Ballycotton seared scallops and crab remoulade, locally foraged nettle soup, West Cork Angus filet of beef wellington, locally grown rhubarb, along with Cork cheese and breads. (see the full menu below).

Not only that but there will be champagne and wine pairing, along with tasting notes for every course, and guests will finish the meal with an Irish coffee made with local Jameson Whiskey, Mahers fairtrade coffee and Glounn Cross cream.  Other surprises will also be included in the dine-at-home boxes for two.

The chefs involved in the food experience are from the Metropole, the Imperial, the Cork International, the Kingsley, Nash19, and Vienna Woods.

The Cork Business Association is encouraging everyone to dress up on the night and to share their experience on Twitter.  They will be linking into people’s homes via social media and there’ll be plenty of prizes for the best dressed, the best presented meal, and the best tweet!”

The charity partner is Marymount University Hospital & Hospice, and the awards and event are sponsored by JCD, Centra, Peninsula, and The Irish Examiner is the media partner.

Carmel Recognised For Her Hotel Career And Charity Work

 CORK HOTELIER RECOGNISED FOR HER CAREER AND CHARITY WORK


The General Manager at the Cork International Hotel, Carmel Lonergan has scooped an award in recognition of her career, charity work and contributions to the local community. 


Carmel was awarded the Southside and District Special Business Award at a special ceremony. 


Carmel Lonergan is General Manager of the Cork International Hotel and is from Cashel in Tipperary. She has been at the helm of the Cork International Hotel for almost five years but has been working in various management roles in the hotel for the last 13 years.


Carmel said: “I am so honoured to have received this award. Whilst the hospitality industry is challenging and certainly has faced extremely difficult periods, there is a unique level of resilience, passion and determination within the industry that sets us aside from so many other industries.


“Hotel guests are the main purpose of our business and we aim to always ensure that exceptional care is taken of them and they receive impeccable service when they come to the hotel. I am incredibly passionate about guest care but also team care. In fact, I refuse to use the word ‘staff’ and will always be heard correcting people and request that the word ‘team’ is used.”


Managing Director of Trigon Hotels, Aaron Mansworth said: “We are delighted that Carmel has received this award and it is very much deserved. The longevity of the team at the Cork International Hotel is testament to how the hotel is managed and there is immense pride to be found by all who work there. Carmel and the team in the hotel have also invested significantly in the “Southside and District Sports Awards” as the main sponsor to recognise the contributions to those within the community. Recognising the achievements of local people at grass roots level is a testament to Carmel and the hotel’s commitment to its responsibility as a community business.”


Since its inception over 11 years ago the Awards has recognised over 130 local sporting individuals and teams located in the community be it in their achievements or contributions to sport. 


Something that Carmel has always been heavily involved in is fundraising and also community projects. This is an area that Carmel puts significant personal time and effort into as she is acutely aware of the challenges faced by charities and communities and is also grateful for the support that they give to the hotel.

Corporate social responsibility is incredibly important to the team at the Cork International Hotel and so each year, they nominate a charity that they will work with for a minimum of a 12-month period. Carmel joined the Bumbleance fundraising committee for two years when they were the charity of choice and with the team at the hotel, over €30,000 was raised during their tenure with the Cork International Hotel which contributed to a new BUMBLEance vehicle being allotted to the South West of Ireland. The current charity partner, the Rainbow Club, which is a centre for children with autism in Cork has been able to accelerate the opening of a new facility as a direct result of a fundraising drive by the hotel, which resulted in €50,000 being raised for the charity over the past 18 months.


Hospitality was not always the plan for Carmel, as she had initially contemplated a life in healthcare and looked at following the footsteps of her mother who is a nurse in Tipperary. However after a summer part time job in a local coffee shop she began a training programme with the Dunraven Arms in Adare over 20 years ago. Carmel knew then that she wanted to embark on a career in the hospitality industry as she thrived on the fast pace and the varied opportunities that were available.


She studied hospitality management in the GMIT and on completion of her time there, she travelled extensively gaining experience in London and the United States before returning to Ireland and choosing Cork as her home.

Trigon Hotels, which includes the Metropole Hotel, Cork International Hotel and the Cork Airport Hotel is busy preparing to welcome guests once again. Provided some restrictions are lifted Trigon Hotels are excited about reopening their doors. The hotel group has launched a number of initiatives such as a Gift Card for the first time ever and also a Family Date Night package. They also have a Festive Afternoon Tea and an outdoor cafe with lots of festive treats. 

Trigon Hotels have just launched their Gift Card, a first for the hotel in perfect time for the festive season ahead. They are encouraging people to ‘shop local’, saying it has never been more important. With Trigon, as well as supporting local employment people are also supporting Trigon’s local suppliers including their food suppliers, beverage suppliers, printers and so much more. For the first 50 vouchers purchased to a value of €150 – they will get a free night's stay in any of Trigon’s hotels.

Managing Director of Trigon Hotels, Aaron Mansworth said: “There is no denying that 2020 has been the most challenging year in our history. It was the year that the world was put on pause at a global level and as a result, we have all had to miss out on moments with our loved ones, families and friends. Some of these moments were perhaps smaller and can be recaptured but some of those events hold much more significance in a lifetime and have passed and quite simply cannot be replayed or replaced.

Impressive New Lunch Menu at New Yorker in Cork International Hotel

Flatbread plus!

No shortage of choice in the new lunch menu at the New Yorker, the cool and comfortable bar at the Cork International Hotel. And there’s a good choice too for the vegetarian. And it’s not just choice - quality is excellent also as we found out during a mid-week visit to check out the new menu, available from 12 noon until 5.00pm.

Of course, this is also a bar, so you’ll also have a great choice of drinks and many are detailed on the back of the menu. If you’re on fish or vegetarian, you might fancy the Contrapunto Albariño. Dona Paula is a quality Argentinian producer and their Malbec would be a good red choice. But most grape varieties are covered here and you’ll find something to suit. Prosecco and Champagne are also available. 

Lots of cocktails too. Fancy a Rebel Cooler (Jameson, Lemon Juice, Bitters, Simple Syrup, Soda Water)? There’s no shortage of Irish whiskies, gins galore (including quite a few Irish ones). And of course, there are beers, draught and bottle. Craft producers also figure on the list, Stonewell for cider, Eight Degrees for beer.
Chicken, moist and delicious

It takes a while to read it through the large menu (it is available online, so you can prepare!). I was looking at the International Seafood Open Sandwich with Kinsale gin cured salmon, smoked salmon, crab & shrimp salad, house brown bread. Also at the Tagliatelle Bolognese  (an Irish lamb Bolognese, fresh egg pasta tagliatelle, rocket and parmesan). 

Finally, I picked the Stone Baked Italian Flatbread - Parma Ham, Toonsbridge Burrata Cheese and Cherry Tomato, Olive Oil, Shoestring fries. Quite substantial but also quite a delicious and satisfying dish, full of flavour on an excellent base.

The Crispy Daily Fresh Fish Soft Taco with Hot sauce, pineapple salsa, soft shell taco, sweet potato fries made CL's short list as did the Crispy Vegetable Taco (Hot sauce, tomato salsa, soft shell taco, French Fries ) from the Vegetarian menu.

In the end, her choice was the Chargrilled Lemongrass and Ginger Sweet Chicken Tortilla Wrap with Buffalo Sauce, Crème Fraiche, Tomato, Watercress, French Fries.  She enjoyed that one, the chicken was superb and well cooked and, all in all, it was a terrific combination. 
Cheese

Also on the main menu, you’ll find  curries and sandwiches, including the West Cork  Sandwich (Gubbeen Chorizo, Toonsbridge Mozzarella, Oven Roast Tomato, Sourdough, Herb Pesto) and, from the Vegetarian, you may fancy Sameera's Columbo Yellow Curry or the International Veggie Burger (Tomato, Gherkin, Rocket, Brioche Bun, Coleslaw, Sweet Potato Fries).


Probably a bit easier to make up your mind when it comes to desserts. I was inclined to go for the Strawberry and Death by Chocolate Fool or the Sweet Pancake with ice cream. But it was the excellent Cork (captained by Gubbeen) v Tipperary cheese (skippered by Cashel) that got the nod. Fruit and crackers came along too, as well as an outstanding spicy apple compôte. Who won? With our host, the Tipperary hotel manager, in the wings, we needed to be diplomatic and called it a draw!

Overall though a visit here to the New Yorker, where manager Justin and his crew will take good care of you, is a win win.
