And do watch out for that Yellow Fin Tuna Belly

I never really thought of the can of tuna in the cupboard as anything other than a handy standby. But all that changed over the past month or so. Beginning when a box of cans that I had ordered from Shines of Killybegs arrived at the house, six cans and two jars!


How could that all be used without us getting fed up of the fish? We did a little bit of research and found recipes in unexpected places. Firstly, Shines themselves have quite a few on their website and it was there that we started.

We picked one by Ciara Shine. Her “Speedy Salad” was described as “a nice fresh dish, easy to prepare. Looks and tastes amazing!” And it lived up to its billing. You can see the recipe here.There are a quite a few items on the list of ingredients but you can pick and choose. Basically you need Shines Wild Irish Tuna (we used the jar) and salad leaves. We added olives and semi-sundried tomatoes and also some of the ORSO Pickled Red Onion (which didn’t make the photo). We were off to a great start.


Another look at the Shine page led to us following, approximately, John Shine’s own contribution: Tuna Mediterranean Wrap. Again, some substitutions were made and our “mix” consisted mainly of Shines Chilli Tuna, lettuce leaves, tomatoes, peppers. Easy to do and worked out well and met John’s description: “Healthy and tasty. Perfect lunchtime treat.”



So what next? Well, the answer was in the post. I had recently ordered The Anti-Cancer Cookbook (an excellent cookbook with all the royalties going to cancer research). A quick flick through on arrival and, without specifically looking for tuna recipes, two turned up. We picked the Tuna and Sweetcorn Fritters, something different, something quite tasty. We added a nice salad to the tuna (Shines Irish Tuna from a can this time) and sweetcorn with a Spicy Ketch-up (by Tipp’s 3 Men in a Trailer). And this surprise recipe turned out very well indeed!



I had read somewhere about tuna being used with Mozzarella and that became our focus for our next dish, another easy one. Yellowfin Tuna belly in olive oil was the chosen can this time - John Shine is very enthusiastic about this particular Tuna, with very good reason as this particular fish is so exquisite you could eat it straight out of the can. A quick trip to the local Dunnes Stores saw us get the Macroom Mozzarella from Johnny Lynch’s farm.

We didn’t need much more, some large tomatoes and basil for the cheese, and a bunch of cherry tomatoes for the salad. It looked nice and tasted even better. Thanks to an internet event, I had just received received the marvellous prize winning Rós Cider (Apple and Rhubarb) from local producer Stonewell. And Rós got on so well with the tuna and the cheese you’d have sworn they were made for each other. 


We still have a few cans of Shines fish left (sardines certainly) but I doubt that we’ll top the Tuna belly, the Mozzarella and the Rós cider combination! Might well do it again soon as there’s still another bottle of that delicious Rós hanging around here.. I think!

O'Mahony's Pork Burger with Sobrasada.

Thanks to O'Mahony Butchers in the English Market (Grand Parade end) and to Neighbourfood, we've got another delicious Taste of the Week. The secret here is surely the Sobrasada. What is Sobrasada? You might well ask. 


Didn't know much about until I was completing my order for Neighbourfood and saw it in the description for this product and found out it is a mildly cured chorizo which works really well with sweet pork. I've often taken Eoin O'Mahony's word for strange terms before and he's never let me down!

So I continued with the order and more or less forgot about it until the Wednesday delivery. And we were amazed with the class and quality of the burgers which also contain fresh parsley, apple and Kalamata olives.

Superb pork too of course. With fries added, also a salad (mostly from the garden) and lashings of the superb Smoked Ketchup from Tipperary's Three Men in a Trailer, we were on a winner. Thank you Mr O'Mahony!

Offering a taste of Tipperary to the nation of Ireland, The Tipperary Food Producers, a network of Tipperary’s artisan food and beverage producers has launched a new “Taste of Tipperary” Hamper in conjunction with Hampers & Co, Ireland’s leading luxury hamper company which was founded in Tipperary in 1993. 

The luxury hamper features products from ten Tipperary producers, with many award-winning products among the selection. 

Creating a Tipperary Hamper offering has been a goal of the Tipperary Food Producers said Con Traas, Chairman of the network which was established in 2008. Commenting, Con said, “We are delighted to launch our first ‘Taste of Tipperary’ hamper and to share some of the fantastic food and beverage products produced here in Tipperary. As a network, we have discussed on many occasions about creating a Tipperary hamper offering, available year-round. I guess you could say that the recent lockdown has given us that extra “push” to get this initiative up and running and we are thrilled to be working with Hampers & Co on this Tipperary collaboration. We are very proud of our homegrown produce here in Tipperary and we hope that everyone can enjoy a taste of Tipperary no matter where they are in the country.”

I like a bit of burger with my Smoked Ketchup!

Our new Taste of the Week is Three Men in a Trailer's Irish Smoked Ketchup.

As you may expect, it is made in Ireland from all natural ingredients with some extra ‘smokey’ flavour – fantastic for barbeques. This wonderfully delicious Ketchup is totally wheat and gluten free and is suitable for both coeliacs and vegetarians.

Love the way artisan food producers draw from one another as is the case here. The natural cider vinegar used, which gives this unique product an instantly recognisable taste, is produced by the Apple Farm, outside Cahir, Co. Tipperary.

I got mine in Bradley’s, North Main Street, Cork. It is widely available though so do check their website for details of stockists. Didn't get to try it at the BBQ yet but it its terrific with burgers, even with fries. Tried their original some time back and that also was Taste of the Week. They also have a spicy one in the range, also at Bradley’s.

Bought this ketchup in The Apple Farm, near Cahir, a few weeks back. It was just days ago that I retrieved it from the cupboard and discovered I had a superb Taste of the Week in my hands. So who are these three men?  In their own words: ‘Three men in a Trailer’ is an idea for a mobile high quality food outlet generated by 3 guys passionate about food, particularly food from Tipperary.' 

Well this strikingly delicious ketchup is high quality, no doubt about it and the trio, JJ, JK and Eamonn, credit its unique taste to the natural cider vinegar that they get from Con Traas's Apple Farm. Other ingredients include Tomatoes, Garlic, Ginger, Cumin, Paprika. A terrific combination. They also do Smoked, Sticky and Spicy versions. Must get my hands on those.

The 280g bottle costs three euro at the Apple Farm. The good news is that they distribute nationwide and you can check your local stockists here. And yes, they do have a trailer! By the way, it's a high end mobile catering unit.
